It all started in 1999 at the annual Horecabeurs in Ghent. Rik Nyssen, who was then running Rick’s Cafe in Moelingen, met Dirk Nauts, owner of the "Proefbrouwerij". This brewery specializes in brewing and developing small-scale beers. After a lot of brainstorming, they opted to make a beer based on syrup. Syrup made especially for Rik in Sint-Pieters-Voeren with the Weertz family.

A year after the first conversation between Rik and Dirk, the time had come: the beer was ready. And it didn't take long to speculate about the name of the beer. Everyone in the Voeren region already spoke about "the beer from Rik". That is why Rick’s new beer was christened. Rick's Blond's bottle has a label with the image of a painting by artist Rob Brouwers.

In the meantime we are quite a few days and developments further. Rick’s beer no longer consists of just a blonde version of 6.5%, but over the years 2 other variants have come out. In 2002 Ricks ’Kersenbier of 7% came on the market. And in 2009 followed Rick’s Bruin, a more bitter beer based on roasted malt with 6.7% alcohol.
