Gregory Selosse and David Paccou are the partners who took over the equipment, premises and brand of Wawa Rone (Brasserie des 3 Clochers located in Billy-Berclau). For those who knew this brand, the frog has now transformed into a toad!
In terms of equipment, we now have a 10hl brewing unit (allowing us to brew two 10hl batches in a row on the same day if necessary), seven 20hl fermenters, and three 10hl fermenters. This allows us to ultimately achieve an annual production of 1,200hl (with two full-time brewers).
