In 2001, in order to thoroughly pursue "what is truly delicious and good sake," the Shirakabegura, a production base that combines both state-of-the-art facilities that reproduce the principles of traditional hand-brewing and sake brewing performed by hand, was completed. This brewery has not only mastered designated sake such as ginjo sake and junmai sake, but also pioneered the new market of sparkling sake, with the birth of "Shochikubai Shirakabegura Mio."
