We launched Fullsteam in 2010 with a single mission: to explore what it means to be a Southern brewery. Sometimes that definition means brewing with foraged and farmed adjuncts. Other times it means making innovative beers with local grain. And sometimes it means just making true-to-style beers more Southern in temperament.
In our nearly ten years focused on this mission, Fullsteam has purchased more than $500,000 in Southern-farmed ingredients. We track our commitment to the Southern Beer Economy in our monthly farm reports.
Whether it’s the beer we brew, the food we cook, or the events we host, we believe in connecting people to the land and to one another. And through it all, we aim to keep it fun. Beer should be fun.

4 oz pour on draft at ChurchKey shared by Travlr, thanks! Hazy yellow with off-white head. Aromas of wheat, lemons, popcorn butter. Tastes of lemon, tart fruit, light wheat. Medium-light body with a dry finish.

Draft at Churchkey. Opaque clear brown color, tan edge head. Yoou’ll never guess what the aroma is like. OK, yes, you’re right. Taste is more beer than coffee, with brownies dipped in you-know-what.

Draft at Churchkey. Hazy pale yellow color, big fluffy white head - see pic. Nice aroma of funky, dusty lemons. Taste is earthy, funky citrus. Tasty.

4 oz pour on draft at ChurchKey. Clear golden orange with off-white head. Aromas of big tropical and stone fruit, citrus, floral, hop oils. Tastes of tropical, citrus, hop oils, floral. Medium body with a dry finish.

Citrus and even a hint of mint. Pours hazy with decent head and lacing. Light bitter finish. Easy drinking. Tap at Scion.

Draft at Churchkey. The third beer I’ve come across with this name. Listed under their Tart & Funky category, but could also be listed as a stout. Very dark clear maroon color, large bubble tan head. Aroma of cherries dipped in cocoa and sourdough brownies. Taste is softly sour chocolate covered cherries. Dark sours don’t work very often imho, but this one does. Sourness is more prominent than the fruit or cocoa.

Draft at Churchkey. Opaque dark brown color, almost black, big bubble tan head. Aroma of Turkish raki. Taste has licorice, a hint of burnt rubber 10,000 times more subtle than Mikkeller Black, vanilla, cocoa, burnt espresso. Interesting and drinkable. One of the best foraged sassafras beers I’ve had, although I’ve had countless beers with farmed sassafras.

Keg at Beer Study. Hazy orange, large creamy tan head. Good retention. Aroma of snappy citrus, tropical hops, pale malts and a tart finish. Taste is strong lactic sourness, lemon, lime, pale malt. Medium bodied, low carbonation, lingering tartness.

Brewvival 2015 Trip #121. Keg at Brewvival. Pours near black with a thin creamy tan head. Decent retention. Aroma of anise and roasted malt. The taste is roasted malt, chocolate, anise, citrus. Medium bodied, lingering spice.
