Description
Founded in 2011 by award winning brewer and Certified Cicerone, Brad Stillmank. With the goal to push the limits of great tasting beer, and unique local ingredients. At Stillmank Brewing we work extremely hard to be sure that we look to our friends and neighbors first for everything that it takes to make high quality beer. This means raw materials like grain, hops, honey, etc.., brewing equipment, packaging materials, marketing and design, on and on, all come from Wisconsin when possible. Our products quality comes first. From time to time we buy from outside the state if that is where the absolute best has to come from, but “Wisconsin first” is not a huge hurdle, as we are proud to live in a state that has so much good to offer! It is our philosophy that if we are doing well, our friends and neighbors should be as well. This is our way of doing just that.

12 ounce can, 6/14/19. Dark brown, large creamy brown head, good retention. Aroma of strong coffee and a nutty note. Taste is roast, caramel, nuts, coffee. Medium bodied, low carbonation. Solid.

Got in a trade with GreenBayBA. 12 ounce can into tulip glass, best before 10/23/2018. Pours opaque dark brown/black color with a 1 finger fairly dense and fluffy khaki head with good retention, that reduces to a thin cap that lingers. Nice spotty soapy lacing clings on the glass, with a fair amount of streaming carbonation. Aromas of big nutty dark roasted coffee, milk/dark chocolate, cocoa, caramel, brown sugar, vanilla, and toasted dark bread; with lighter notes of molasses, dark fruit, smoke, charcoal, herbal, pepper, pine, and roast/toasted earthiness. Nice aromas with good balance and complexity of dark/black/roasted malts, coffee, and moderate earthy hop notes; with great strength. A bit too burnt/charred on aromas. Taste of big nutty dark roasted coffee, milk/dark chocolate, cocoa, caramel, brown sugar, vanilla, and toasted dark bread; with lighter notes of molasses, dark fruit, smoke, charcoal, herbal, pepper, pine, and roast/toasted earthiness. Light-moderate pine/herbal/spicy hop and roast/charred bitterness on the finish. Lingering notes of nutty coffee, milk/dark chocolate, cocoa, caramel, brown sugar, vanilla, toasted dark bread, smoke, charcoal, herbal, pepper, pine, and roast/toasted earthiness on the finish for a good bit. Very nice complexity, robustness, and balance of dark/black/roasted malts, coffee, and moderate earthy hop flavors; with a great roast/hop bitter/sweet balance; with no acrid/astringent flavors after the finish. Light-moderate increasing dryness from lingering hop/char bitterness. Medium carbonation and body; with a very smooth, moderately creamy/bready/grainy, and fairly sticky/chalky balanced mouthfeel that is nice. Minimal warming alcohol for 7%. Overall this is a very good American coffee porter. All around nice complexity, robustness, and balance of dark/black/roasted malts, coffee, and moderate earthy hop flavors; very smooth and easy to drink with the modestly bitter/charred/drying finish. Balanced fruity/nutty coffee and rich malt complexity; with moderate earthy hop presence. A little too bitter/roasty for the style, but a very enjoyable offering otherwise.

Got in a trade with GreenBayBA. 12 ounce can into pint glass, canned on 6/27/2018. Pours slightly hazy deep copper color with a small dense off white head with good retention, that reduces to a thin cap that lingers. Light spotty lacing clings on the glass, with a fair amount of streaming carbonation. Aromas of caramel, brown sugar, brown bread crust, and toasted biscuit; with lighter notes of nuttiness, plum, pear, red apple, herbal, grass, and yeast earthiness. Nice and pleasant aromas with good complexity of bready malts and light fruity yeast/earthy hop notes; with solid strength. Taste of caramel, brown sugar, brown bread crust, and toasted biscuit; with lighter notes of nuttiness, plum, pear, red apple, herbal, grass, and yeast earthiness. Mild herbal, grassy, spicy bitterness on the finish. Lingering notes of caramel, brown sugar, brown bread crust, toasted biscuit, nuttiness, light fruits, herbal, grass, and yeast earthiness on the finish for a good bit. Very nice robustness and complexity of bready malts and light fruity yeast/earthy hop flavors; with a nice malt/bitterness balance, and no cloying flavors after the finish. Lightly increasing dryness from lingering bitterness. Light-medium carbonation and medium-plus body; with a very smooth, creamy/silky/bready, and lightly sticky mouthfeel that is nice. Zero warming alcohol as expected of 5.1%. Overall this is a very nice ESB. All around nice robustness and complexity of bready malts and light fruity yeast/earthy hop flavors; very smooth and easy to drink with the mildly bitter/drying finish. Very soft mouthfeel from the lactose and mellow carbonation. Very clean and rich malts; restrained fruity yeast and balancing earthy hops. A very enjoyable offering, and well made style example.

Keg at the brewery. This is the base beef of the Perky Porter, which is apparently a regular beer. Black, large creamy tan head, good retention. Aroma of coffee, roast, vanilla, chocolate. Taste is roast, chocolate, vanilla, coffee. Medium bodied, lingering bitterness. By far the highlight of the flight.

Tap. Press clear Ameer, small beige head, good lacing. Aroma is nutty, dark bread, malt, caramel, hint of grass, Noble hop. Flavor is light sweet, light bitter. Medium body, soft mouthfeel. Solid.
