With a background in science and a penchant for the cavalier and unusual, our team began brewing in downtown St. Louis in 2013. Moving to our new and expanded location in South City in 2018, our lineup includes a number of rare brews you won't find anywhere else.

Bottle - pours yellow white head - nose/taste of sea salt, lemon, lactose sourness, roasted peanuts and tart acid - light body. Peanut note is weird but dissipates as beer warms.

Bomber from Wine & Cheese. Pours a very light copper with a slight head. Aroma is nose arousing honey with some yeastiness. Med body, but not likely more. Flavor is honey, Belgian yeast, spice note, and maybe banana. All the flavors are rather light. The odd thing is my tongue is burning a bit - nothing else tho. Is that a heat affect? It’s rather smooth. But no strong individual flavors. Easy sipper. Suddenly, graham cracker? Hmm.

Bomber from Wine & Cheese. Pours translucent perry color with a transient slight white head. LIght pedio aroma. Med minus body. Flavor is light pedio, hint of brett, and some fruit notes. Not strikingly strong in flavors, but it is as described. Except perhaps for the great part. Interesting tho.

Bomer from Wine and Cheese. Pours bright translucent gold with a white head. Aroma of mildly earthy citrus. Med body or so. Some lemony citrus sourishness. Finishes less than dry, but it’s an ok thing. Quite drinkable.

Bomber from Wine & Cheese in Clayton, MO. Pours gold with a transient head. Aroma is very coffee. Med minus body. Flavor is coffee and light treacle/caramel. Recommended for coffee addicts.

Bober from Wine & Cheese. Pours golden copper with a slight beige head. Aroma is sort of sweat sox hop. Med + body. Flavor is earthy, Pretty hoppy. Lots of exotic aspects as well. Heat is not notable. Sort of relaxed hoppy fruit wonderfulness. Tho it took a bit of consideration to decide on wonderfulness.

750ml bottle shared by Madvike. Deep red-burgundy unfiltered body. Thin, oily off-white head. Nice delicate mouthfeel. An interesting mash up between the brown malt and sour tones. I don’t really enjoy the aroma. The wine barrel gives it some depth. Really grew on me, pretty solid US sour. Biting dry sour tones. Smooth cherry Oud Bruin/ Flanders Red feels.

Draft: Cloudy, light yellow, with a white head. Lemony, grapefruit scent. Taste has a little yeast, musty grapefruit. Almost wit-like...a hoppy wit....peel-bittering. OK.
