Description
In 2011 Niels Schipper was a freelance photographer, i.e. underemployed.
To stave off boredom, and armed only with a few books and a slightly obsessional nature, he decided to make some beer in his laundry. Using a chilli-bin, a tea-urn, and a lot of trial and error, Niels finally emerged with a brew that was, quite simply, beautiful.
It went on to win a big New Zealand brewing prize, and next thing he's on TV and taking calls from newspapers and magazines all around the country.
Schipper's was born, and overnight Niels had become a full-time craft beer maker.

On tap at Vultures Lane. Lemon, bread, little tartness, saison spice. Easy drinking but a bit boring at the same time.

On tap at OGH. Aroma is chocolate, a little coffee and some woodiness. Flavour is bitter dark chocolate and roasted nuts. Quite thick and buttery. Not bad. I’d put it as an India stout rather than a black IPA, but I like those too!

On tap at Brewers Cooperative. Crisp hops, both in taste and aroma. Some tropical fruit, grass and pine from the hops and some biscuit too. Very little sweetness.

Draft at Brew Craft. Hazy amber color, medium off white head. Aroma of Christmas tree. Taste is bittersweet pine resin. Decent.

Draft at the Glass Box in Auckland, at 7 am on arrival day, courtesy of staff, thanks! It’s nice when your fitst beer of a trip is a free beer. Clear amber color. Sweet malty start with a balanced bitter finish. Nice.

Amber, slight haze. Aroma is chinooky with wet pine forest. Soft body but a rich, lingering bitterness.
