Description
In 2011, we (Greig McGill and Phil Murray) teamed up to launch Brewaucracy upon an unsuspecting world. Not much happened for quite a while after that. I mean, we made some beers and stuff I guess. The beers were kindly called "niche" by some, and more often called "weird shit that's not IPA" by most. We brewed styles that we love, and often styles that were overlooked by the crowds in their rush to drink the next hazy triple-dry-hopped IPA bomb.

On tap at Brewers Cooperative. Lots of juniper giving this a big gin-like herbal nature. Plenty of botanicals! Lemon, coriander, thyme, juniper. Some bready yeast notes. Really very nice.

Batch 1 and batch 2 tasted side by side, courtesy of Greig and Alex, thanks! Both are clear dark ruby amber color, and batch 1 is much more lively. Both have a nice aroma of subtle smoke and crispy burnt wood. Batch 1 has a sweeter taste, but both are nice balanced, subtle and smooth. Very tasty.

Bottle from Hamilton Wine. I tasted this one after a meal made with Fire Dragon Chillies’ Dragons Fury sauce, so I’ll have to taste it again when mybtaste buds aren’t screaming and writhing in pain. Pours clear golden yellow with a thick and fluffy white head with good retention. Aroma of sweet straw, subtle lemon and light spice. Taste is also on the sweet side with a bit of light spice and some booze peeking through. A decent enough tripel variant.
