On tap, shortly after finishing my BJCP exam. Honestly my planned review was: clear, amber hoppy, caramel ,malty, f*ck y’all. Honestly...not my style. Pours with a clear amber-bronze hue with a small off-white head that lasts. Aromas are fruity, caramel, with some citrus and slightly lemon hop notes. Also pine and tropical fruits. Light bready and caramel malt notes. Light esters. Flavors are citrus, caramel, lightly fruity, pine, resin, bitter, citrus and lemon. Bready. Honestly, seems decently similar to the standard Chesebro hops (slightly less intense citrus). Overall lively bubbles, decent attenuation for the caramel, some warming. No astringencies. Decent ASA.

Cask. Pours with a hazed deep brown body and a small tan head. Aromas are smokey, leather, toasty, campfire, bready, roast, licorice and iodine. Flavors are hugely roasty, coffee, ash, smoke, campfire, bacon and vanilla. A bit acridly burnt. Smooth, low carbonation. Smoke ends up on the harsh side of things.

On tap at the brewpub. Pours with a murky golden body and a white head. Aroma of citrus, orange, lemon, light spice, citrus zest, dry and estery. Flavors are citrus, lemon, straw, and light esters. Very dry with some lively bubbles and a lingering bitterness. Tasty.

On cask. Pours with a hazed amber-golden body and a thick and lasting off-white head. Aromas are bready, caramel, dried fruit, toasty and smokey. Flavors pack a bit of heat, smokey, earthy, dried apricots, caramel, bready. Very nicely integrated. Good carbonation for a cask beer. Well done.

Pours with a mostly clear amber body. Aroma is hugely sour, cherry, sour bugs, leather and light caramel. Flavors are strongly acetic, very sharp. Sour, cherry, caramel, red wine, brett. Coming along nicely. Aggressive, but tasty. Sour, a touch thing, but the tannins build it up.

On nitro tap and dry hopped cask (sorachi ace). Tap: Pours with a completely clear golden body with a milky, nitro, white head. Aromas are a bit muted by the nitro. Slightly bready, caramel, fruity esters, and tea. Flavors are bready, grassy, biscuit, biscotti, herbal hops, and a touch of marmalade, estery, a bit of a hard water note. Lingering bitterness. Nitro mouth of light bubbles and creamy.
Sorachi Ace Cask: Lightly hazed golden body with a thick white head. Aromas are bright with lemon, tea, bready, biscuit and some dry hop grassiness. Flavors are of buttered toast, caramel, southern biscuits, diacetyl (nose and flavor), lemon. Light bubbles. Dry. Tap tasted better by a little bit.

Tap at the brewpub. Pours with a very deep brown body and a scant small tan head. Aromas of dark fruits, vinous, red wine, raisins, dates and vinegar. Flavors are vinous, slightly sour, dark fruit, tobacco, manure, funk, red wine, toffee and dark fruit. Light bubbles which leads to a slightly thin mouthfeel, some good tannins. Dave (brewer) says this should be very nice around winter. I Agree, young but quite tasty, don’t know if the sour is intentional, or just a product of the red wine. It is big, decadent and is well rounded by the barrel. A good, big sour dark is in the future that I might like better. Very nice, rounded, big barrel aged belgian.

On tap. Pours with a clear, deep red body and an off-white head. Aromas are fruity with caramel, orange, citrus, toffee and tropical fruits. Flavors are bitter up front with caramel, mango and other fruit flavors. Lingering fruit and bitterness in the finish. Maybe a tad astringent. Lively bubbles.

On tap at the source. I was told that this is a very young sour as of now. Pours with a hazy yellow body and a foamy white head. Aromas of fresh grassy, grapes, passionfruit, horseblanket and funk. Lots of tropical fruit. Smells more like Sauvignon blanc than Chardonnay to me. Flavor is floral first and sour second. Fruity, a but tannic. Not quite as sharp in acidity as I’d like. Very light carbonation. Pretty dry. Nice but the youth shows a bit much for my liking.

On tap. Pours with a hazy brown-garnet body with a minimal off-white head. Wine, dark fruits, currants, brown sugar and tannins on the nose. Still bodied, and tannic. Completely still, currants, wood with a bitter finish.
