We’ve never done things the easy way. We dismantled the plant ourselves. We moved it to Leith and rebuilt it ourselves. We dug out the drainage (pro-tip: pay real men to do that), installed the flues and built the cooling system ourselves. We design, brew and drink the beer ourselves. We are Pilot.

Can from Against The Grain. Clear deep golden body with a thin off-white head. Steady carbonation. Faint lacing. Aroma of orange and grapefruit. Flavour of orange peel and menthol. Medium body with a slick texture. Soft fizz. A solid IPA - bold and bitter. I hope to see more higher ABV beer from Pilot; the last few I remember have all been under 6% ABV.

330ml can. Pours black with a beige head, good retention. Aroma of roast malts, slightly ashy/smokey, dark chocolate, caramel. Taste of roasted malts, coffee, ashy, burnt/charred malts, caramel, chocolate, light sweet, moderate bitter. Medium bodied. That's a great low-strength stout, sessionable.

330ml can. Clear orange gold with a white head. Aroma of biscuity and bready malts, peppery hop. Taste of grainy, biscuity and bready malts, peppery hop spice, bittersweet with a drying finish.

330ml can. Clear pale gold with a white head. Aroma of elderflower, floral honey. Taste is floral and sweet, elderflower, honey, rice and pale malts, maybe some stone fruit, no bitterness. Light-medium bodied.
Nice one but leans to the sweet side.

Appearance - golden and clear with an off white head and steady carbonation.
Nose - brown bread, toffee and earthy.
Taste - dried orange going into marmalade shred. Burnt toffee and malt loaf.
Palate - close to medium bodied, dry and balanced bitterness.
Overall - good example of the style.

Appearance - cloudy yellow and a thin white head.
Nose - dank unmalted wheat, slightly cheesy but not in a bad way.
Taste - lemon, dried orange unmalted wheat and butter. Some hint of banana.
Palate - light bodied and tangy middle and finish.
Overall - enjoyable but not on style for me.
