Description
Pilot was born when Matt Johnson and Patrick Jones met while studying for masters degrees in Brewing & Distilling at Heriot-Watt University in 2012. A shared view that there was something different to be done in brewing – not traditional real ales, but not just another U.S. craft beer clone either – led to home-brewing together, which eventually led to buying a second-hand brewhouse and moving to the heart of cosmopolitan Leith, commencing brewing right at the end of 2013.
We’ve never done things the easy way. We dismantled the plant ourselves. We moved it to Leith and rebuilt it ourselves. We dug out the drainage (pro-tip: pay real men to do that), installed the flues and built the cooling system ourselves. We design, brew and drink the beer ourselves. We are Pilot.

Bottle big thanks to Nick. It pours lightly hazy yellow - gold with a small white head. The aroma is soft, sweet, honey cake, tangy, apple, pear, grape and some oiliness. The taste is sweet, oily, tangy, honey cake, apple, pear brandy, boozy heat, melon, straw, grass and spice with a warming finish. Medium body and fine, foamy carbonation. Quite flavourful. Good fun.

Bottle big thanks to Nick. It pours hazy golden with a medium white head. The aroma is sweet, tangy, white grape, gooseberry fool, toasted almond, apple, pear and hay. The taste is sweet, tangy fruit, apple, pear, melon, white grape, gooseberry, toasted oat, almonds, alcohol kick, greengage and warmth through the finish. Medium body and fine carbonation. Punchy stuff. Nice grapey character. Fun stuff.

Keg at Salt Horse. It pours murky deep orange with a small white head. The aroma is rich sweet tangy fruit action, apricot, peach, marmalade, mango salsa, fruit smoothie and a kick of spice. The taste is bitter - sweet, yet still firmly bitter, juicy fruit action, mango, peach, apricot, bit of spice, sappy, pine, citrus peel and a kick of alcohol through the finish. Medium body and fine carbonation. Flavourful for sure.. Punchy and fruity. Noice.

On keg at Monty's Bar. Appearance - deep amber and cloudy. Decent head. Nose - marmalade and general orangey notes. Taste - more marmalade, light resin and green plant stalks. Palate - close to medium bodied with a creamy yet tangy texture. Dry bitter and tangy finish. Overall - good, as usual.

Keg at Usher’s and can from Cork & Cask. Murky golden/amber body with a thin off-white head. Steady carbonation. Good lacing. Aroma of biscuit, lychee, pineapple and marmalade. Flavour of tangy orange, pine, caramel and sharp lime. Medium body with a slick mouthfeel. Soft fizz. Rich and tangy.A cracking IPA at a good price.

On keg at Monty's Bar. Appearance - amber with nice lacing. Slight haze. Nose - tonnes of orange, some mango. Taste - more tropical and citrus, probably mango and orange again. A touch of lime towards the close. Palate - light to medium bodied with a creamy texture and a long dry finish. Good length. Overall - lovely stuff.

Tap at the outhouse. Nose is orange, citrus, orange, grains. Palate is pretty strong orange, bitter citrus. Bitter finish. How did they get this much out of 2.5%??

Keg at beavertown brewery. A hazed ruby red amber coloured pour with a lasting off white head. Aroma is light citrus fruits, jammy pine, light grass,. Flavour is composed of light grains, little toast, hint of jam, pine, chalk,. Palate is thin, light, Refreshing, chalky, highish carbonation. Spritzy. Ok.
