Description
Pilot was born when Matt Johnson and Patrick Jones met while studying for masters degrees in Brewing & Distilling at Heriot-Watt University in 2012. A shared view that there was something different to be done in brewing – not traditional real ales, but not just another U.S. craft beer clone either – led to home-brewing together, which eventually led to buying a second-hand brewhouse and moving to the heart of cosmopolitan Leith, commencing brewing right at the end of 2013.

We’ve never done things the easy way. We dismantled the plant ourselves. We moved it to Leith and rebuilt it ourselves. We dug out the drainage (pro-tip: pay real men to do that), installed the flues and built the cooling system ourselves. We design, brew and drink the beer ourselves. We are Pilot.

Cask @ The Grove, Huddersfield. Black with a frothy off-white head. Has a very stated coffee roasted malt aroma and taste with a dryness.

Fra fat på Junkyard i Nottingham 20 Feb 16. Delt med Rune. Svart. 0 skum. Lett aroma av røstet malt. Smaken lær. Lett røstet malt i bakgrunnen. Balansert - men lite variasjon.

Cask @ The Grove, Huddersfield. Cloudy amber-orange with a thin frothy head. Hoppy and fruity with a fair bitterness.

Cask at cloisters, 5.1%. Pours hazy orange, nose is pineapple, sweet toffee, burnt malts, taste is similar, juicy and sweet,little thin, weirdly some tomato.

5.1% Cask at Cloisters Dark Days Light Nights festival. Pours Leith murky with a thin white head. Aromas of tropical fruits, fruit salad sweets. Taste is sweet, fruity. Light bitter finish. Pineapple.

Keg from The Beerhive. Milky golden body with a medium white head. Steady carbonation. Faint lacing. Aroma of juicy orange, flower petals and pineapple. Flavour of lime, grass and nettles. Medium body with a smooth, creamy mouthfeel. Light fizz. A fruity, hoppy Pale Ale. Really good.

6abv Keg at the Holyrood 9a... Dark black... Thinest off white lacing... Dark chocolate roast malts nose... Light bitter chocolate roast... Low carbonation byt not flat... Sticky sweet... I think unlike the other oreo i had the base is too rich so the biscuits not showing through as much. In end i occasionally get light hits of the mallow.. Where as the other i got more from the dark biscuit

While waiting for a train to Derby, Finn and I shared a couple of half-pints at Sheffield Tap. This one from cask had an amber-gold coloured body with a slight haze. Low pearl white head leaving spotty lacing behind. Aroma of oily hops and juicy malts. Malt-fruity flavours of grapefruit and restrained caramel sweetness. Rounded, drying bitter finish. Fine drinkability (Sheffield 15.02.2016).
