The reason Jamie Emmerson and Irene Firmat started Full Sail in the first place was to build a company that was completely different from the ones where we’d previously worked. It wasn’t about business as usual. It was about finding our calling in life — about truly appreciating our “human resources,” and balancing work, life, family and friends in a way that makes life truly worth living.

Determined to make world-class beer in our own backyard, one of our first, and perhaps best, decisions was to invest in new, state-of-the-art brewing equipment. So we bit the bullet, laid down our borrowed cash, and spent the better part of 1987 installing the new system. Our love for the environment is what drives our sustainable practices, so pure water, local ingredients and responsible processes are poured into each and every tasty pint.

Gold with fast fading white head.Nose is light banana and yeast.Light sweet wheat malt taste with unpleasant spiced note. I have to disagree, this finish is not clean, it has a lingering off bitter spice note which really detracts from the beer

Bottled. Orange to amber in colour, not much of a head. Obvious grapefruity hop aroma. Light bodied with sparkling light mouthfeel and a pleasant, really hoppy, bitter finish.

Deep brown, tan head. Nose is lightly roasted and chocolate.Taste is a balance of chocolate and carmel malt with a medium dry end. I don't notice the hops others refer to. A decent beer, but rather unremarkable, and slightly bland

On tap. Dark red with a brown head. A little sour in the aroma with some herbal scents. Flavor of fruit; reminded me of an IPA.

(2001) Chestnut; brown-yellow head, not very ample. Nose gives preserved fruit (confits), ginger, "Grand Marnier". Some hops seem to struggle to come trough. Taste: sweet-sourish-bitter. WOW! Some balance, some impression. A bit harsh, resiny finish, though. very chewy mouthfeel. Slight alcohol impression, very masked. In the aftertaste, the taste of confited orange or Gr. Marnier (much less sweet) reappears, to stay long. A better-than-average, very American Barley Wine.

Top Sail Imperial Porter from Full Sail Brewing Company

Jet black. Dark brown, full head. Coffee, mocca nose. A herbal nose too (dandelion?). Outspoken coffee taste, also pipetobacco, -ash. There are hops in the background too. Very full mouthfeel. Carbonation gives a slight burning sensation. Long bitter aftertaste, chocolatey, dandelion. Well-made beer, but I'm not a coffee enthusiast. Update (draught, 1 year on bourbon cask) Full black, little yellow brown head (4/5). Gorgeous wooden brandy-like nose, bit tobacco, vineous, wine grapes (10/10). Slightly bitter, then very winey. Gorgeous and immenseley complex. (9/10) Very filling, velvety - creamy all the way. (5/5) This is superb. Of course, the Bourbon lagering has to account for a fair bit. Overall would be 18/20 - so rated it ends at 4.6 out of 5 - and earned every point!

Dark brown with yellowish shine. Full brownish head, lasting and lacey. Dark chocolate nose, sweet, fruity too (ripe plums, succade). Taste is very bitter, hops and bitter chocolate. Deep. Very full bodied, much more than expected from 6.5 ABV. Very long lasting aftertaste; bitter chocolate gets streamlined with the malt to a beautiful finish. Can’t help but like this beer.

Orange-brown, bit hazy. Brownish thick head. Explosion of noble hops, a bit of chalk. Fine hopflower nose, very nice. Taste gives malt first, good underbuild, then very bitter finish, kind of spice-herbal extract, in the nicest way possible. Retronasal, I'd hazard lemon-grass! Sweet vegetable frying oil-flavour. Not overly full-bodied, more restrained. Oily again. Bitter-effect is very long; nice bitterness, honest hops. I might have wished for an extra, though.

Capsize Imperial Pilsner from Full Sail Brewing Company

Orange. Thick orange head, collapsing. Nose is malty, and fruity as grape or vaguely citrus. Very hopbitter – so much that distinction between noble or bitterhops becomes moot. Citrussy retronasal, long. Mouthfeel is a bit oily, very full-bodied. Refreshing all the same. Nice. Given blind, Pilsener is the last thing I’d thought of.
