The reason Jamie Emmerson and Irene Firmat started Full Sail in the first place was to build a company that was completely different from the ones where we’d previously worked. It wasn’t about business as usual. It was about finding our calling in life — about truly appreciating our “human resources,” and balancing work, life, family and friends in a way that makes life truly worth living.
Determined to make world-class beer in our own backyard, one of our first, and perhaps best, decisions was to invest in new, state-of-the-art brewing equipment. So we bit the bullet, laid down our borrowed cash, and spent the better part of 1987 installing the new system. Our love for the environment is what drives our sustainable practices, so pure water, local ingredients and responsible processes are poured into each and every tasty pint.

Brewed 11/10/98, Bottled 1999, Sampled October 2002. Intense fruity orangey, apple, and date aromas plus spicy hops. Hazy orange-amber with small fading head. Strong and sweet; fruity with alcohol, smoky and herbal notes. Warming balanced finish. Intoxicating. Low carbonation and quite smooth. Outstanding.
Score based on this sampling. 2003 sampled in 2006: Appealing dark honeyed odor. Medium foaming head, light haze from yeast. Fruity and spicy with persimmon.

GABF 2002: Dark copper color. Rich malty aroma and strong malty flavor. Almost fruity. Sufficient hops for balance and thats about it. Would be great unfiltered.

From a bottle, 2010: Peppery and herbal hop nose. Woody and earthy notes too. Buttered scone malts. Kinda weird, not loving it. GABF 2002: Bright copper color. Rich citric resiny aroma. Nice and clean hoppy flavor. Med bitter finish. Good.
