Description
Shawn Baker had a vision to create his own craft still cider, wanting to produce a really good quality product using a premium British apple. Bad Boy Cider is deliberately cloudy, made using a single variety of “Dabinett” apples, one of the most versatile cider apples from Herefordshire. Shawn researched all the apples available and settled on “Dabinett” due to its golden colour and nutty taste. No wine yeast has been used in this production; it’s all naturally fermented from the apple itself. This process takes a little longer but yields the result Shawn wanted.

Bad Boy Cider is very much a family business with all four of us getting involved in some form or other. Our children Daisy and Fred have been actively involved in the creation of our fruit ciders having told Shawn that you need to produce the fruits for the growing interest of the younger market and also their sweet tooth! Shawn’s wife Trudie came up with the idea of Bad Bitch! wanting to produce a sparkling pink cider for the girls.

We are currently experimenting with new varieties including Katy and Kingston Black, so hopefully new varieties to follow soon.

BIAB sample courtesy of Grumbo, cheers Graham! Golden colour, no head and aroma of fruity apple, some musty funk. Taste is sweetish, apple, fruity, some tartness, alittle funk and hint of tannin. Medium bodied, low carbonation, dry finish. Nicely drinkable.

30/7/2021. From BIAB at the Redoubt Beer Festival, Harwich. Pours virtually clear dark gold with minimal head. Aroma of semi-sweet apple, citrus, light funk. Medium sweetness, light tart edge. Moderate body, slight oily texture, soft to flat carbonation. Slight tannic finish. Quite drinkable.

ABV: 6.0%. ✅ Clear medium yellow orange colour with virtually no head. Aroma is moderate to light heavy apple, sweet apples, yellow apples. Flavor is moderate sweet and light light acidi with a average duration, apples, tart, sweet apples, tart apples, medium dry. Body is medium, texture is watery, carbonation is flat. [20181018]

Bladder bag at GBBF'19, day four, 09/08/19. Light golden yellow with a small crown of white bubbles. Nose is apple pie, some sweetness, straw, wooded tones. Taste comprises bitter sweet apple, hay, light tannins. Medium bodied, moderate carbonation, drying close. Not bad.

Cask at GBBF 2019. Funky aroma. Light gold. No head. Light sweet. Some acidity. Thin with a chalky mouthfeel. Long finish. Decent enough.
