Our story starts on the rugby pitch, where founder Evan Sallee, Niko Tonks, and Matt Hauck first met while playing for rival teams. The competition turned into friendship and while home brewing together the idea of founding a brewery started simmering. Then, the notion of a cooperatively owned brewery came to life when the three founders had beers together at Black Star Co-op in Austin. Our founders believed the operations of craft breweries were opaque and that there was a gap between being a home brewer and owning a brewery. The founders’ hope was that the co-op model would provide a way for consumers to be more involved in operations while also bringing co-op values to the Minnesota craft beer scene.

That hope resonated with family, friends, and neighbors. Nearly three hundred members joined the co-op before the taproom doors even opened. On September 6, 2014, Fair State Co-op became the first cooperatively-owned brewery in Minnesota, and the third in the country. In the years since we opened, co-op members have helped design beer recipes, picked fresh berries for our annual fruited sour, and volunteered countless hours through our Cooperates program.
The support of members still drives our success. The cooperative’s membership is currently over 1,500 and growing every day. In 2017, we added a 40,000 square foot production facility to meet growing demand in distribution. At the original Northeast brewery, we continue to brew innovative small-batch beers that feature hard-to-source and local ingredients. Often these limited beers are only available at the taproom or through the cooperative’s bottle subscription program, Journeys + Sidequests.

On tap @ the brewery. Pours a hazy golden orange appearance with a khaki head. Spicy, dank, spicy hoppy nose. Some onion and garlic in there. Medium body. Low sweetness. Moderate high bitterness. Onion, spicy garlic, dank flavor. There’s some tropical fruits and dank ganja. This is good if you’re into oniony ipas. I like it but not sure it’s world class.

On tap @ the brewery. Pours a reddish brown appearance with a light brown head. Piney, sprucey, roasted malty, mild dark chocolate aroma with some resiny notes. Decent body. Resiny hoppy, dank flavor with some roast. Kind of a nice flavor. Finishes earthy and bitter. I’d buy a pint of this.

On tap @ the brewery. Pours a murky deep red appearance with an off white head. Some dark fruits, raspberries, vanilla, light vinegar, cheese, and unfaked funk. Pretty fucken tart. Vanilla, coconut, black raspberries, and cranberries in the flavor. Refreshing. Nice mouth feel and carbonation. A little strange but fun.

On tap @ the brewery. Pours a very milky bright yellow orange appearance with a white head. Smells incredibly boozy. Coconut, bready, vanilla, apple, pear, banana aroma. Holy shit, it tastes like spirits as well. Somewhat tart with some banana and apple. Maybe a hint of cinnamon. Some glue and chemical notes. Very strong flavor and finish. Not very good.

On tap @ the brewery. Pours a milky yellow appearance with a white head. Lemon zest, vanilla, juice, light clove aroma. Light bodied. Juicy lemon flavor. Slightly tart. A bit spicy. Kind of like a shandy. Refreshing and easy to drink.

On tap @ the brewery. Pours a lightly cloudy, light yellow appearance with a white head. Zesty spice, white pepper, lemon, light banana, clove aroma. A touch tart. A hint of metal. Refreshing, nice carbonation. Lemon and vanilla flavor. Solid.

Draft at the tap room. Gold color with a large head. Considerable hops in the aroma. Flavor is dry with hops. Clearly recognizable as a lager and hard to classify. It is coming awfully close to a Czech pils with those hops. Good beer.

Hazy orange. Minimal head Flavor reminds me of a gold Belgian strong ale. Sweet, some citrus fruits with a light hint banana.
