Description
We make our beer, cider, and food with as much love and care as we possibly can. For us, that means fresh and local ingredients, warm and welcoming service, and a commitment to the city where we grew up.

How lucky are we to be here in Portland? Making beer from the best water on this earth. Pressing cider apples grown in the most fertile soil imaginable. Serving food grown on farms just miles from our restaurants. We are constantly inspired by the woods and water and people of our home state. We’ve been fishing, hiking and camping in Oregon since we were born, and Sasquatch has become a love letter to the things we care about.

We have developed a wide network of relationships with local farmers – not just for the meat, dairy and produce we offer at our restaurants, but for raw ingredients for our beer and cider, spent grain removal for cows and pigs, even for the wood we used for our table tops. We know how intimately we are all connected here in this state, and how important it is to spend our money and our time in ways that help our friends, neighbors and purveyors.

The same philosophy informs everything we do here. Rather than spend money on traditional ads or marketing campaigns, we made the decision long ago to focus on a hyper-local commitment to supporting schools and charities in our area. Even though people across the river may be completely unaware of us, we have a fierce and dedicated customer base in our backyard. That kind of loyalty is priceless. Along the way, we’ve donated tens of thousands of dollars to local schools and non-profits.

This is all a long way to say that community matters. We always thought of Sasquatch as a metaphor for something secret and rare and precious. Compassion, kindness, love for your neighbor, being from here – sometimes it seems like these things are becoming endangered. But don’t worry we aren’t going extinct, we’re just hiding in our neck of the woods.

Sweet, herbal, light fruity taste. Fruity aftertaste. Medium to fizzy mouthfeel, medium low bitterness. Sweet, malty, floral scent.

On tap at Bailey's, pours a deep dark brown / black with a thin bubbly beige head. Aroma of roasted malt, piney hops, and some toasted chalky notes. Flavour brings out astringent hops, roasted malt, and some strange earthy notes. Something slightly off about this, but it's well-balanced. Decent stuff.

Draught. Dark brown pour with a thick white head. Honey and chocolate aroma. Barley and honey notes in the flavour. Malty finish

Tap at Bailey’s Taproom, PDX, 26/05/13. Hazed dark amber with a thin off white head which clears to the edge and leaves a thin film. Nose is caramel malt forward, bitter tropical notes, faintest of hop aromas due to malt domination. Taste comprises a big malt hit, caramel, bitter grapefruit, sugars, booze. Full bodied, moderate carbonation, warming booze in the finish. A sub par example of the style, all malt and booze.

6000 beers and no end in sight. Sample from firkin at the 6th Annual Rogue Firkin Fest at Green Dragon. Hazy orange-yellow color with a medium fizzy off-white head that diminishes steadily. Partial rings of lacing. Aroma of hops, yeast and malt. Medium body with flavors of fruity yeast, malt and citrusy hops. The finish is sweet with a fruity yeast aftertaste. Decent overall.

Named after some wolf in Oregon. Pours a clear bright copper color. A rich fruity nose with earthy caramel and grains. The flavor stresses fruity hops, some biscuit and almost a English ESB flavor here, clean and tasty.

On tap at the brewery. Pours a deep bright copper color with a medium white head. A big fruity nose. This is a really nice IPA: rich fruit, resin, sweet, great late boil work here, caramel, more oranges and a hint of pine. Excellent, clean and tasty.
