Description
A modest jewel in the Luxembourgish brewing world, Brasserie Simon is both a keeper of the soul of good beer and a creative rebel. Rich in its independence, the company emphasizes the quality of its products and customer service to strengthen its Luxembourg roots.
At Brasserie Simon, we take the time: our fermentation process is still separated into two stages as we did always: a main fermentation in open vats which is followed by maturation in closed vats. A small craft brewery since 1824, Brasserie Simon is the only brewery in Luxembourg to have the latest generation open fermentation tanks guaranteeing the taste of real beers from the past.

pours a clear golden with a steady white head and a nice lacing. aroma of grains, cereals, some oily spiciness. flavour of grains, sweet apples, hay. sweetish finish, little bitterness. overall more like an export than pils. nice bottle though.

pours a slightly hazy pale golden with a small white head and no lacing. mild aroma of vanilla, grains, honey. flavour of hay, citrus, grains. watery and slightly sour.

Pours a hazy yellow color, topped with a small and non-lasting white head, soapy. Soon nothing is left. Very vague aroma, just some sweet fruity notes with a tad citrusy presence. Also a bit honey-like. Taste starts sweet, some honey with a little sourness. Bittery finish, mild with some honey again in the aftertaste. Light and crisp.

330ml bottle @ Shrewsbury Beer Share, Feb 16, courtesy of Blackhaddock. Many thanks! Pours pale straw yellow, foamy white head. Spicey coriander aroma. Taste is pleasantly sweet with lots of spice, coriander and light yeast. Enjoyable.

Bottle 330ml. [ As Simon Bio ].[ Trade by Koelschtrinker ]. Clear medium yellow color with a small, fizzy, fair lacing, mostly diminishing, off-white head. Aroma is moderate malty, pale malt, light butterscotch, corn notes. Flavor is moderate sweet and light bitter with a average duration, pale malt, grain, buttery, sweet malt, sharp, light corn. Body is medium, texture is oily to watery, carbonation is soft. [20160109]

Spelt beer (and named as such in Letzebuergisch) made with spelt allegedly cultivated at the nearby Upper Sauer Nature Park. Courtesy of Stefan of the Weerspannige Brouwers. Lacing, off-white, medium thick head, deep ’old gold’ colour, clear. Grainy, lightly earthy and lightly floral aroma of dry hay, sourdough, field flowers, turnip, dried nettles, old dry cheese, bread crust. Restrained ’dried’ fruitiness in onset, hints of unripe stonefruit and raw pineapple, spritzy carbo, grainy and lightly honeyish sweet middle phase with the expected ’deep’ sourishness provided by the spelt, finish adds subtle floral and grassy hops, gently bittering, but the basic malt sweetness prevails. Simply and relatively ’clean’ for the style, pleasant summer quencher.
