Description
Natural Selection brewing is a collaboration between the International Center for Brewing and Distilling at Heriot-Watt University and Stewart Brewing. It gives an opportunity to postgraduate MSc Brewing and Distilling students to design, market, sell and launch a new beer.

50 cl bottle. Pours clear and golden orange with a huge white head. Aroma is grapefruity, citrusy and light peachy. Phenolic, light herbal yeasty. Bitter, toasted malty and bitter dry finish.

Bottle from Hippo Beers, Glasgow. It pours clear amber with a gigantic thick off-white head. The nose is fragrant, orange, apricot, spice, light toast, earth and tangerine. The taste is smooth, earth, wood, orange peel, grapefruit, peach, orange sponge cake, light tartness and a touch of spice. Medium body and moderate carbonation. Tasty and well-balanced. I am impressed!

Bottle at Bruceโs - London. Pours light, hazy orange-gold with a fine, creamy white. The nose has lots of fresh peach, some brett, a bit of hay. Light sweet flavor, some funky brett, lots of fresh peach, dry pale malts. Light bodied with quite lively carbonation. Moderate dryness to finish, dry peach, faint barnyard, brett, bitter hay, sand. Pretty nice stuff overall.

Aroma: Pepper, yeast, Rivita, mango and biscuit.
Appearance: Hazy golden body with a large off-white head that gradually fades. Flat carbonation. Great lacing.
Taste: Belgian yeast, white pepper, lime and digestives. Very hoppy for a Saison. Absolutely delicious.
Palate: Medium body with a very oily texture. Soft carbonation prickle.
Overall: An interesting, hoppy Saison. An incredible achievement, I canโt believe this was brewed by students! I didnโt think Iโd say this, but this was the best beer I tried at the Scottish Real Ale Festival 2013.

Re-rated 3/8 from bottle. Much livelier, and without the whisky notes. Good. Cask at the Bow. Pours clear gold with thin white head. Saison yeast on the nose, and also something weiss-beer-like, some citrus hops. Taste has more of the same, but on the end has a weird whiskey note. No carbonation, natch.

Cask at Stewart Brewery - Hazy amber in colour. Peach, apricot, yeast and gooseberries in the aroma. Gooseberries, peach and yeast in the taste. Very authentic and tasty, but with a twist.

Aroma - perppery hops, soft fruits, apricot, cereal malts, slight sour note
Taste - Spicy peppery, soft pale fruits, smooth cereals, quite saisony quite strong peppery spicy notes, yeast, slightly harsh
Palate - Medium body, oily, good texture, fairly dry. Finish is peppery, spicy, pale fruity malts, dry.
Overall - Liked the soft rye in this, quite strong peppery spicy notes. Would like another try of this.

50cl bottle from Appellation Wines. Pours an oily golden colour with a very generous head - nice. The nose has white pepper and pineapple. The taste has a fresh green like the stem of a grape stem then more of the citrus followed by a cooking apple thing then the spicy pepper finish. The palate is well balanced - medium bodied with a long refreshing finish. Overall, what a fantastic beer.
