This starts with the approach to recipe development taken by our Head Brewer, Keigan. Contrary to starting with a style guideline in mind, then moving forward – he starts with a flavor and experience in mind, then works backward. And since we’ve decided to not be bound by style guidelines, he’s free to use whatever ingredients in any amount with whatever technique he wants to create a new beer experience.
To enable this philsophy and to enhance our creativity, we created a custom built brewhouse that allows us to make the beers we want to make. It’s centered around the region’s first mash filter. This piece of equipment allows us to use any grain in any percentage – and do so while using a fraction of the water and energy of a traditional brewery.

Minnesota Trip Beer #13. Keg at the brewery, 5/7/16. Hazy orange, large foamy white head, good retention. Aroma of pale malt, dry citrus. The taste is citrus, apples, pale malt. Medium bodied, refreshing.

All Pints North 2016. Amber color. I was not sure what it was while drinking it and thought it might be a bock. Medium sweet malt and I do get a little of the salt, because I am looking for it based on the description. The lager yeast is noticeable.

On tap at the brewery. Pours a clear gold with a white head that dissipates to the edges. Aroma has has strong cocoa and vanilla with a coffee bite underlying. Flavor has a combination of sweet chocolate and vanilla with some coffee in the finish.

On tap at the brewery. Pours a cloudy peach with a white head that dissipates to the edges. Aroma has a good amount of hibiscus with light tart fruits and a bit of lemon underlying. Flavor a has light spice and hibiscus with some lemon and light grain.

On tap at the brewery. Pours a cloudy yellowish brown with a white head that dissipates to the edges. Aroma has spicy mango and oats with some sweet citrus supporting. Flavor has a good amount of sweet citrus with growing mango and an oat backbone.

On tap at the brewery. Pours a near clear brown with an amber hue and a tan head that dissipates to the edges. Aroma has an interesting combination of black teas, rye and a bit of pine backing. Flavor starts with black tea and rye but finish is dank with pine.

On tap at the brewery. Pours a murky deep straw with a near white head that dissipates to the edges. Aroma has a good amount of wheat with some sweet citrus supporting. Flavor has sweet wheat throughout with a bit of citrus underlying.

On tap at the brewery. Pours a hazy amber orange with a tan head that dissipates to the edges. Aroma has a decent amount of oat with some earthy citrus and a hint of bitter grapefruit. Flavor has lots of oat with some bitter citrus and a light hay note supporting.

On tap at the brewery. Pours a cloudy amber with a brown hue and a light brown head that lasts throughout the beer and laces. Aroma has notes of earthy pine and rye with a light leafy note. Flavor has lots of pine with a good rye bite and some bitter grass underlying.

On tap at the brewery. Pours a clear gold with a near white head that dissipates slowly to the edges. Aroma has lots of coffee with sweet grains and biscuit underlying. Flavor has lots of coffee with some caramel, biscuit and some sweet grains supporting.
