Each Beer has its own name and unique identity; like the people who have inspired them. The brewery is family owned and operated, a proud member of the Oregon Brewers Guild as well as the Pacific Northwest's rich brewing heritage. We produce over 600 barrels of Beer a year in our 4 barrel (120 gallon) Brewhouse and bottle approximately 5000 cases a year. The rest of our beer is served on draft in our tasting room and at a few select accounts in Oregon and elsewhere.
Hair of Dog is proud to be one of the first breweries in America specializing in the production of high alcohol, bottle conditioned beers as well as experimenting with the barrel aging process since 1994. Currently, the brewery has 180 oak barrels used to age Beer from 6 months to 8 years. We use new oak as well as previously filled spirit and wine barrels. All the Beer is made by two Brewers, Denver Bon and Alan Sprints.
We are also dedicated to buying local products for both the Brewery and restaurant in an effort to keep as much of our money in our community. We work directly with farmers whenever possible and are proud to say that 99% of all the ingredients we use are produced within a 350 mile radius of the brewery. Our Organic Pilsner malt is from Gambrinus Malting in British Columbia, the water runs pure from the Cascade mountain range, hops are grown in Oregon and Washington and both bottles and labels are made in Portland. Since we opened all the graphic design has been created by the Felt Hat of Portland. The original brewing equipment has been recycled from other industries and is still in use today. After Brewing all the ingredients are used for animal feed by a local farmer.

Pour from magnum bottle, 2004 bottling date. Pours dark brown with red highlights when held to the window. Beige head is on the smaller side and slowly dissipates to a fine ring. Aroma is dark fruits, anise and colas. The taste has anise, licorice, cola, raisins, walnuts and some deftly applied spices. The palate is medium in viscosity and the carbonation is soft. Finishes long and semi sweet and perhaps just a touch cloying. Overall: just lovely. This is a beer nerds beer and so I loved it. Paired well with some smoked Gouda cheese.

Tores Garage September 2024. Brown color with a beige head. Aroma is pine, grapefruit, bread, alcohol, herbs. Flavor is pine, grapefruit, bread, alcohol, herbs, caramel, dried fruit, oxidatioin Very nice beer.

On tap at bottleworks. Pours opaque dark brown withh no head. Aroma has bourbon, leather, smoky wood. Flavour has leather, bourbon, smoky wood, dark dried berries. Lots of boozy warmth. Complex and rich, though the sourness throws it off a bit.

On tap at Bottleworks, pours black with almost no head. Aroma is full of decadent bourbon, old exquisite wood, leather, smoke, and dry cocoa — very elegant aromatics. Flavour is dry and almost a bit tart, with tons of leather, smoke, tobacco, bourbon, and sour fruits (I guess from the cherry). There's definitely too much sourness here, but it's subordinate enough to the leather, smoke, tobacco and bourbon that it's not ruinous. Very good and a treat to be able to try.

Well stored bottle @ Tores garage. Almost clear amber body with almost any head. Nice aroma, malt, dry fruit and a bit floral. Taste has sweet malt, dry fruit and nicely warming alcohol, moderate bitterness and a bit spicy. Fine body with long lasting sweet aftertaste.

Bottle @ Tores garage. Almost clear amber body under a thin tan head. Strong aroma of dry fruit with caramel and warming alcohol. Taste is sweet and malty with caramel and lots of dry fruit, pleasant warming alcohol and some bitterness. Amazing after 22 years with so little impact of oxidation.

Bottle. 2002 vintage. An unclear brown beer with a small off-white head. Caramel, roasted malts, some chocolate and alcohol in the aroma. It's full bodied and lightly warming, sweet, with a decent carbonation. Chocolate, roasted malts, some coffee and alcohol. Lasting finish. Delicious even though it's 22 years old..240906

Nitro tap at Apex. Pours opaque dark brown with beige nitro head. Aroma has gentle smoky tobacco and leather. Flavour has tobacco, leather, some roasted malt. Very smooth mouthfeel. Complex and unique flavour profile, all well-integrated, fantastic.

Bottle from Big Top: pours light brown, a bit cloudy. Aroma is caramel, vanilla, bourbon. Taste is sharp, boozy, sweetish, caramel. Nice.

Draught@Omnipollos Hatt, Stockholm. Ambery brown colour with a tiny off-white head, which disappears quite quickly. Aroma is raisins, dried fruits, some toffee, mild alcohol and wood with some slight plummy tones too. Flavour is dried fruits, raisins, alcohol, wood, toffee and some mild toasted tones with a bit of vanilla and some biscuity elements as well. Really smooth. Good dessert beer.
