Description
Von Ebert is owned and operated by Tom Cook, Dennis January, Eric Simko and Tom S. Cook. Tom S Cook, “Von Ebert Brewing was named after my Great Grandmother Ebert. She was the guiding force to my immigrant family when they came over from Germany to the United States in the early 1900’s. The family name Von Ebert translates to “of the house of Ebert. As Ebert roughly translates to boar in German our theme was born.”

Our trident approach to brewing encompasses what we love most about craft beer. We focus on clean drinking lagers, traditional and experimental hoppy ales, and our mixed culture fermentation program. Each of our breweries has a unique focus. Glendoveer houses our mixed culture and more experimental fermentation, while the Pearl hits heavy with IPAs and German inspired lagers. Between the two breweries we are consistently churning out new and exciting beers, be sure to stop in often to see what’s new!

16 oz can poured, picked up at Total Wine, Lynnwood. Clean and bright golden appearance. Nice, pine forward west coast style IPA, with a moderately aggressive bitterness. Biscuit grains are well balanced, making this a full tasting IPA. Forest hops linger late. Has a crisp side to it. Overall a really good IPA.

Can. Pours a clear golden hue. A light bready tropical nose. Rich, flavorful, tropical hops, earth balanced malt, the rice is pretty noticeable. Smooth.

16 oz can poured, picked up at Total Wine. A bright, somewhat cloudy golden pour, thin head. Pine forward aroma, some juicy citrus, and hints of berry. Winter forest hop aroma. Flavor is a nice piney hop constant. Nice balance of citrus and pine, with a modest bitterness. Big flavor, and very easy drinking for a borderline imperial. Excellent brew.

On tap at Belmont Station Bier Cafe, pours a clear pale golden with a small white head. Aroma has some grassy hops, crisp crackery malt, and straw. Flavour has grassy goos, straw, light pine, and crisp crackery malt. Crisp and reasonably constructed, but I can’t shake an unfermented wort character.

Can, very slightly cloudy amber-gold, lots of foam. Aroma: overripe fruit, peach, hops. Taste: medium sweetness, very bitter, fruity.

Draft at Gourmet Haus. Pours hazy yellow with small white head. Wide, lacy patterns down the glass. Aroma is tropical fruit and dank. Flavor is overt dank and terroir, with topical fruit and citrusy fruit rind. Rather spritzy in mouthfeel.

16 oz can poured, picked up at Tapped, Mill Creek. Dense orange haze, cream foam head with plenty of lacing. Rich and fruity hop profile, cream body. Orange zest, soft floral, mild peel bitterness. Juicy, very orange centered hazy. Unique and enjoyable fresh hop.

Can. Pours a clear golden hue with a medium white head. A light perfume and toast nose. Citrus, some bitterness, bready core, soft sweeter fruit. Smooth.
