Description
Von Ebert is owned and operated by Tom Cook, Dennis January, Eric Simko and Tom S. Cook. Tom S Cook, “Von Ebert Brewing was named after my Great Grandmother Ebert. She was the guiding force to my immigrant family when they came over from Germany to the United States in the early 1900’s. The family name Von Ebert translates to “of the house of Ebert. As Ebert roughly translates to boar in German our theme was born.”
Our trident approach to brewing encompasses what we love most about craft beer. We focus on clean drinking lagers, traditional and experimental hoppy ales, and our mixed culture fermentation program. Each of our breweries has a unique focus. Glendoveer houses our mixed culture and more experimental fermentation, while the Pearl hits heavy with IPAs and German inspired lagers. Between the two breweries we are consistently churning out new and exciting beers, be sure to stop in often to see what’s new!

Nice soft palate, chocolate and light roastedness, coffee. Creamy. Long finish. Medium bodied.

US Pint can on 19th March 2026 at my daughters in Laguna Hills. Very pale body, hazed look, fast fading white head. Dank, earthy and fruity flavours all blending into an interesting taste. A little to Dank for me, but it's a decent beer all round.

Can from Total Wine in Vacaville, CA. Pours clear gold with a large creamy white head. Aroma of pine, citrus and a touch of Allium. Med body. It's tropical in many aspects, but it has Old School IPA aspects as well. Not dry. Pale malt support is discernible. Flavor is pine, citrus, green melon, and that Allium note. Very nice.

Can from Total Wine in Vacaville, CA. Pours clear gold with a large foamy white head. Aroma of dank and mixed fruit. Med body at least. Dry and nicely bitter. Flavor is dank, cittrus and other tropicals. Earth and dank seem intertwined. Very good overall.

On tap at Ridgewood, pours a clear golden with a small white head. Aroma has a vibrant tropical fruit explosion, along with piney hops, citrus, and melon. Flavour is super fruity and tropical, with vibrant tropical fruit, bitter citrusy hops, pine, and resins. Super vibrant, tropical and bitter. Excellent.
