Description
Von Ebert is owned and operated by Tom Cook, Dennis January, Eric Simko and Tom S. Cook. Tom S Cook, “Von Ebert Brewing was named after my Great Grandmother Ebert. She was the guiding force to my immigrant family when they came over from Germany to the United States in the early 1900’s. The family name Von Ebert translates to “of the house of Ebert. As Ebert roughly translates to boar in German our theme was born.”

Our trident approach to brewing encompasses what we love most about craft beer. We focus on clean drinking lagers, traditional and experimental hoppy ales, and our mixed culture fermentation program. Each of our breweries has a unique focus. Glendoveer houses our mixed culture and more experimental fermentation, while the Pearl hits heavy with IPAs and German inspired lagers. Between the two breweries we are consistently churning out new and exciting beers, be sure to stop in often to see what’s new!

On a flight of four in the Whole Foods bar in Laguna Niguel on 4th September 2025. Murky Dull yellow body with a wispy white head. Couldn't get passed the heavy grapefruit aroma and taste, struggled to enjoy it.

On tap at Ridgewood, pours a clear blonde with a small white head. Aroma has plenty of piney hops, some pot-like terpenes, and crisp biscuity malt. Flavour is very dank, partly from the hops and partly the twrpenes I assume, with some hop tang, and a crisp biscuity malt base. Dank, pot-like finish. Good stuff.

16 oz can poured, picked up at Total Wine, Lynnwood. Clean and bright golden appearance. Nice, pine forward west coast style IPA, with a moderately aggressive bitterness. Biscuit grains are well balanced, making this a full tasting IPA. Forest hops linger late. Has a crisp side to it. Overall a really good IPA.
