Description
Von Ebert is owned and operated by Tom Cook, Dennis January, Eric Simko and Tom S. Cook. Tom S Cook, “Von Ebert Brewing was named after my Great Grandmother Ebert. She was the guiding force to my immigrant family when they came over from Germany to the United States in the early 1900’s. The family name Von Ebert translates to “of the house of Ebert. As Ebert roughly translates to boar in German our theme was born.”

Our trident approach to brewing encompasses what we love most about craft beer. We focus on clean drinking lagers, traditional and experimental hoppy ales, and our mixed culture fermentation program. Each of our breweries has a unique focus. Glendoveer houses our mixed culture and more experimental fermentation, while the Pearl hits heavy with IPAs and German inspired lagers. Between the two breweries we are consistently churning out new and exciting beers, be sure to stop in often to see what’s new!

Can from Total Wine in Vacaville, CA. Pours gold with a large white head. Aroma suggests berry rather than orange. Med body. Lightly juicy. Moderately bitter with something like citrus rind. That berry thing is still there. Gets more citrus and more bitter with time. Nice lager.

Clear yellow body with lasting white head. Fruit and grassy aroma. Malt forward taste. I didn't taste much strawberry or passion fruit. Full bodied with a long all over the mouth finish.

On tap at Chuck’s CD, pours a clear golden with a small white head. Aroma brings out piney hops, citrusy notes, and biscuity malt. Flavour has some citrusy hops, grapefruit pith, and bready malt. Pithy, bitter finis. It’s alright.

16 oz can. Aroma is dank, pine, pineapple, tangerine. Pours nearly clear golden with a one finger off-white pillowy head with excellent retention. Taste is moderately building to highly bitter with piney and tropical hop flavors. The tropical notes stand out in aroma more than flavor.

Nice soft palate, chocolate and light roastedness, coffee. Creamy. Long finish. Medium bodied.

US Pint can on 19th March 2026 at my daughters in Laguna Hills. Very pale body, hazed look, fast fading white head. Dank, earthy and fruity flavours all blending into an interesting taste. A little to Dank for me, but it's a decent beer all round.

Pistachios loaded, bold, like a croissant 😁 Medium-bodied, tons of pistachios, roasted malt, low to moderately sweet. Enjoyable.
