Description
Von Ebert is owned and operated by Tom Cook, Dennis January, Eric Simko and Tom S. Cook. Tom S Cook, “Von Ebert Brewing was named after my Great Grandmother Ebert. She was the guiding force to my immigrant family when they came over from Germany to the United States in the early 1900’s. The family name Von Ebert translates to “of the house of Ebert. As Ebert roughly translates to boar in German our theme was born.”

Our trident approach to brewing encompasses what we love most about craft beer. We focus on clean drinking lagers, traditional and experimental hoppy ales, and our mixed culture fermentation program. Each of our breweries has a unique focus. Glendoveer houses our mixed culture and more experimental fermentation, while the Pearl hits heavy with IPAs and German inspired lagers. Between the two breweries we are consistently churning out new and exciting beers, be sure to stop in often to see what’s new!

Gold, with a thin head. Rich mosaic aroma. The palate has more hop - lots of weedy mosaic, hint of lemon, some vague piney notes. Lots of bready malt, and it's quite bitter. The base beer is set up to handle this load of mosaic. This works for me.

473mL can. Pours clear blonde with a white head. Aroma has pine, moldy citrus, a bit of armpit/sulfur. Flavour has a pretty dirty profile: pine, old pot, moldy citrus, a bit of sulfur. Not as fresh/bright as I was expecting from a fresh hop; the sweaty/sulfurous character is pretty off-putting, though not predominant. Overall still pretty enjoyable.

473mL can, pours a clear pale golden blonde with a medium white head. Aroma is very doughy, with light piney hop oils, and biscuity malt. Flavour is less vibrant than expected -- the Mosaic isn't particularly tropical or bright -- there's some earthiness, a touch of pine, and dry bready malt. There's a touch of soapiness on the finish. Dry, a bit flat, lacking some pizzazz, but it's clean and drinkable enough. Not as good as regular Volatile Substance.

4oz pour at Ridgewood. Pours clear yellow with white head. Aroma has crisp pine and dank notes. Flavour has dank oils, crisp pine needles. Really nice hop expression.

Keg at Track Taproom, Manchester. Pours hazed yellow orange, with white foam. Aroma: sweet malts, citrus zest, stone fruits. Taste: towards moderate sweet, stone fruits, tropical, melon, grass. Medium body with fine carbonation.

On tap. Pours a clear orange copper hue with a medium white head. A big sweet citrus nose. Clean, some resin, fresh perfume and oily hops. Lemons. Very good.

Draft pour to a tulip at Bambinos, Seattle. Clean golden pour, tons of sticky head and lacing. Very hop oily, lots of pine, citrus peel, bold bitter bite. Dank hops. Aggressive but very much appropriate for the style. Piney and citrus nose, very forest, very PNW. Long lingering hop heavy flavor. Very nice IPA.

On tap at brewery. Pours clear yellow with a white head. Aroma has a lot of estery sweetness. Flavour is just a lot of sweet malts and esters. Weak carbonation. Has neither the carbonation or the spicy character I would expect in a proper tripel.

On tap at brewery. Pours dark brown with a beige head. Aroma has very subtle roasted malt. Flavour has crusty roasted malt. Decent carbonation. Solid dark lager.
