DID WE MENTION WE’RE NOT A BREWERY, BUT A BEVERAGE COMPANY?
While we’re the most passionate about beer, the root of our curiosity lies in fermentation itself. To feed that thirst, we’ve been working with local and regional artisans of the non-beer kind, and are very excited about this side-venture we’ll be taking to Downtown Asheville. While our main focus is definitely beer, we’ll also be trying our hands at a whole smattering of Wine, Cider, and Mead, as well as non-alcoholic beverages.
We’ve got a 15bbl Brewhouse and a 3bbl Pilot Brewhouse, a dedicated Wild/Funky Barrel Cellar, and fermenters ranging from wine barrels up to 30bbl stainless tanks.
WE’RE DEAD-FOCUSED ON BRINGING YOU EQUAL AMOUNTS OF OLD SCHOOL AND NEW SCHOOL.
That means Lagers, IPAs (clear AND hazy), Wild Ales, Big Ol’ Stouty Stouts, Super Sessions, Chippy Boiz, and everything in between. With that said, we can’t wait to work with local farmers, artisans, and makers in an effort to expand our non-beer side of things. Come explore the other side of fermentation with us!

Not sure what a dark kolsch is supposed to be, but I'm guessing Alligators comes pretty close to the mark. Surprising depth of flavor for a 3.8% beer, with loads of cocoa and roast and dark fruit, with a bready, yeast-tinged finish laced with smoke and espresso on the fade. No, it doesn't quite soothe a stout jones, but it's a very interesting pint, regardless.

$4.00 pint can, WW. Hazy gold with a white head. Pineapple, floral hops, rose petal, pine, melon nose. Flavor is orange peel, melon, pine, floral hops... somewhat juicy. Good flavor.

$4.00 pint can, WW. Hazy gold with a soft white head. Lemon zest, bitter peach, mango, tart berry, pine nose. Flavor is melon, tart berry, citrus peel, green leaf. Leaning sour, but not sour.

16 ounce can from Uptown. Pours a crazy purple color with a small white head. A big juicy fruity nose. Sharp, sour bitterness, herbal, maybe it is the color, but this tastes a bit like grapejuice. The sourness is odd, it is distinct from the bitter hops. Sorry, this doesn't work at all. It's unbalanced, like eating a hibiscus plant.

16 ounce can. Pours a clear orange hue with a medium white head. A bit darker than a normal pils. A big soft fruity nose. Light caramel, hoppy, fresh citrus, light pils malt. Not really trying to be traditional, but this is clean and flavorful. Good.

16 ounce can from Uptown. Pours a clear orange hue with a small white head. A nice sweet citrus nose, tangerines and toast. Smooth, light resin, sticky oily oranges, some light bitterness. Very nice. The name is really odd, like a roadie for Kid Rock came up with it.
