While we’re the most passionate about beer, the root of our curiosity lies in fermentation itself. To feed that thirst, we’ve been working with local and regional artisans of the non-beer kind, and are very excited about this side-venture we’ll be taking to Downtown Asheville. While our main focus is definitely beer, we’ll also be trying our hands at a whole smattering of Wine, Cider, and Mead, as well as non-alcoholic beverages.
We’ve got a 15bbl Brewhouse and a 3bbl Pilot Brewhouse, a dedicated Wild/Funky Barrel Cellar, and fermenters ranging from wine barrels up to 30bbl stainless tanks.
WE’RE DEAD-FOCUSED ON BRINGING YOU EQUAL AMOUNTS OF OLD SCHOOL AND NEW SCHOOL.
That means Lagers, IPAs (clear AND hazy), Wild Ales, Big Ol’ Stouty Stouts, Super Sessions, Chippy Boiz, and everything in between. With that said, we can’t wait to work with local farmers, artisans, and makers in an effort to expand our non-beer side of things. Come explore the other side of fermentation with us!
Expect the unexpected…and…well, I guess now it’s actually expected? Definitely don’t expect any more vowels, though. Did that joke land? Dammit.

Tangerine, wheat malt, and orange peel aroma. Hazy golden yellow with large white head. Floral tangerine, vanilla, wheat malt, and mildly bitter orange peel and grass flavor. Good body.

Clear Solo cup at home. Felt right. Single from 604. Canned on 8/6/2024, tagged: Nickelback tattoo. I'm confused. Dark brown on black, sludgy, thin & oily coffee head. Smell is sweet & soft bourbon with smooth coffee roast & a bit of brown sugar + vanilla. Not getting the other stuff, even after it warmed. Creamy, barely carbed, bittersweet leaning pretty sweet but with contrast. Thick but not syrupy. Strong chocolate coffee cake upfront with noticeable banana, bourbon maple frosting. Medium lingering coffee acidity, slight pleasant bitterness to the booze. Smokey maple finish. Very warming. Good. I wanted more banana.

$4.95 single from Appalachian. Clear Solo cup four weeks post hurricane. Not washing the dishes, you can't make me. Canned 7/24/24. Hazy, cool mint green or maybe margarita mix, light soda head. Smell is chemmy pineapple & lime over some generic ginger ale soda. Taste is surprisingly okay. Zero gag. Taste is raspberry, lemon + melted margarita, pear, extra lime peel bitterness. A touch soapy, a bit chemmy. Plenty sweet. Somewhat nostalgic. All good. Smooth but syrupy soda feels, middle high tart, high acid, tickles my enamel. Sulfite headache. Barely beer. Refreshing when kept cold. Just one though. Still too much leftover Halloween candy to justify another.

Single from Appalachian, purchased pre-hurricane. Real pint glass, will wash it, eventually. Slightly hazy, pale gold, lingering lace. Smells sharp, veggy, cooked onion, a little bit of pee. Slightly citrusy, noble-adjacent with big acid. Mint & white onion. Thin, dry, irritating crispy. Finish is off-dry with a slight slickness. At almost $4, this is pretty meh.

Classic pilsner aromas with a touch of modern hops. Flavors are similar to nose, pops come out a little more with lemon, grapefruit and MJ. Bittersweet up front with a slightly bitter finish. Okay body and carbonation.

6 week old pint can A: Finely hazed pale amber with a small fluffy head. Short retention. S: Sweet bready aroma with hints of tart fruit. T: Tart and mildly bitter with green apple notes and light toasty malts. Tasty and balanced slightly toward the hops. M: Light body, average carbonation and a smooth mouthfeel. O: Nice hoppy pils with good refreshment value.

Month old pint can A: Very pale straw yellow with little head or retention. S: Muted aroma of generic citrus and crackers. T: Lemon lime hops bring a little bitterness and fruity overtones. Lightly woody at the finish. That's it. M: Prickly, light, clean and dry except for a smooth ending texture. O: Crushable and clean. OK but expensive for a gameday sipper.

Rating number 7,777! 16 ounce can from Tavour. Hazy yellow gold pour. Pillowy white head. Floral hop aroma hints at tropical fruit and dank hops. Bittersweet citrus flavor . Notes of grapefruit, lemon, orange and pineapple. Sticky mouthfeel. Dry, piney finish.
