Description
Wicklow Wolf was established in late 2014 after the meeting of two likeminded friends with a common interest in good beer. Quincey Fennelly and Simon Lynch both fell in love with craft beer while living in California for many years. Setting up a brewery together was always inevitable.

Bottle. Pours a black color with a small tan head. Has a roasted malty chocolate aroma. Roasted malty chocolate flavor with hints of caramel. Has a roasted malty chocolate caramel finish.

Draught at ICBF2015. Hayz orange with a full head. Aroma is mango and tropical fruit. Flavour is bitter, chalky hop, fruit with a light sour bitter finish.

Bottle from McHughs. Ruby brown with a firm head. Aroma is fruit, yeast and malt. Flavour is cherry, spice, a little ash. Smoky finish.

Growler from McHughs. Hazy gold with a thin head. Aroma of bready malt. Flavor is caramel, bitter malt and herb finish.

From tap. Pours clear and dark brown with a small tan head. Roasted malty, light breadish. Toasted malty, light fruity. Mild bitter and toasted malty finish. Breadish.

Bottle from Martins. Light caramel with a thin head. Aroma is malted caramel. Flavour is grapefruit hop, tangy bitterness, butter on a grainy bread finish.

Dark amber, slight haze, thin frothy white head, some lacing
Aroma of sweet malts, resinous hops, touch of fruit, getting a bit a caramelised orange, dab of butterscotch malt
Taste of sweet caramel malts, lots of bitter hops, some bitter zest, mainly just bitterness rather than fruity bitter zest, dab of butterscotch malt again (not sure about the malts), quite coarse flavour and rough hewn
Palate - Soft carb, medium to full body - rather claggy viscous mouthfeel, sweet gloopy malts, bitter hops. Finish quite dry, long bit spicy astringent bitter linger, gooey malt residue
Overall - Heavy malts and lots of bittering hops, rather thick mouthfeel that’s maybe better broken up on carbonated keg. Plenty of flavour and bitterness here, but needs more refinement

Amber, some yeast haze, rather murky (maybe didn’t give enough time for beer to settle), thin white head, light lacing
Aroma of sweet malts, soft fruits, dab of butterscotch caramel, slight citrus
Taste of sweet caramel malts, slight butterscotch, bitter hops, dab of bitter zest, little fruit mainly bitter hops, fruits cramped by too much malt sweetness
Palate - Soft carb, medium body, fairly sweet, bitter hops. Finish is considerably bitter, long bit over bitter linger
Overall - Over malty for a blonde, seems over stuffed with malts and bittering hops. Didn’t get tropical or floral aromas. OK to drink, but a bit pricey at €4 a bottle
