Description
Wicklow Wolf was established in late 2014 after the meeting of two likeminded friends with a common interest in good beer. Quincey Fennelly and Simon Lynch both fell in love with craft beer while living in California for many years. Setting up a brewery together was always inevitable.

Bottle. Clean caramel with a thin head. Sweet biscuit malt aroma. Flavour is bread, caramel, dusty malt. Sweetish finish

Bottle at Mum and Dads, from Callans Dundalk, 26/12/14. Very lightly hazed golden amber with a decent off white covering that dissipates then stays for the show. Nose is floral hop, tangerine, melon, orange pith, light pine, citric tinged straw, perfmued pissoi. Taste comprises tangerine, hoppy pangs, straw, floral notes, mandarin, pink grapefruit, faint spice, light caramel malt, chalky mineral vibes. Medium bodied, fine carbonation, semi drying close peppered with citricana and hop bitterness. One of the better craft Irish IPA’s I’ve encountered thus far, nice balance, fresh, clean, tropical fruit tones, some pine and hops - decent enough fayre and one I would actually class as an IPA not an IPA wannabe ESB affair!

Pitch black, fairly dense tan head, some lacing
Aroma of roasted malts, quite burnt roast, some dry charcoal, some burnt coffee grounds
Taste - Less roast than the aroma, fairly roasty, dark malts, some bitter dark chocolate, soft yeast, some dark fruity coffee
Palate - Soft carb, medium body, smooth, good mouth feel. Finish as main flavour, slightly dry, quite rich roast
Overall - Best of the WW beers I’ve tried so far

Amber, slight haze, frothy white head, slight lacing
Aroma of soft sweet caramel, some soft fruits, almost no hops
Taste - soft caramel malts, light honey, some butter biscuit, again little hops in this, not keen on this
Palate - soft carb, medium body, quite sweet. Finish has more soft butter biscuit and cereal
Overall - Hmmm....just soft biscuit buttery malt, didn’t really like this. Maybe this bottle was iffy...

Caramel brown, clear, frothy beige head, slight lacing
Aroma of soft caramel, slight dab of ground coffee, weak aroma
Taste of caramel, soft toasted malts, brown sugar, slight sour note, dab of brown bread, little hops, mainly malts, rather dull
Palate - Medium carb and body, slightly sweet. Finish is a bit dry, more toasted malts, brown bread crust
Overall - Rather ordinary to be honest, bit boring. Down to 2.9.

Caramel brown, slight haze, frothy off white head
Aroma of soft caramel malts
Taste of caramel malts, light toffee, some toasted malt in there
Palate - Medium carb and body, light sweet. Finish has some more toasted malts, dab of brown bread crust
Overall - Came across as a rather plain beer for the abv, certainly better as it warmed up, served too cold and fizzy. Cask would be better for this. Will review bottle soon.

Draught. Murky brown with a thin tan head. Aroma is light malt. Flavour is brown sugar, malt a little spice and nut. Dirty texture on a dry base.

Dark amber, clear, thin white head, light lacing
Aroma of soft bitter orange, light pine hops
Taste of bitter zest. dab of caramel, dry bitter hop, lots of bitterness from the hops, getting an odd plasticy off note
Palate - Medium carb, medium light body. Finish is dry bitter, bit over bitter, still getting that off note

Draught at Norseman (I still like the name change back). Hazy chestnut with a solid head, great lacing. Aroma is sweet toasted malt. Flavour is bitter syrup, dry base, long dry bitter finish
