Bottled@fonefan. Hazy golden colour with a small white head. Aroma is fruity, floral, mildly earthy along with a slight spicy edge to it. Flavour is mild acidic notes as well as some wood, earth, spices and quite fruity things. Nice palate.

750 ml bottle shared with me by my friend Craig. Sticker with “Honey Ale Bottled 12/4/14” on back of bottle. The pour is hazed yellow with a nicely formed one inch white head. The aroma is soft lemon citrus, dry funk leather, bit of oak and general Saison yeast character. The taste is the component parts of the aroma; the citrus lemon, funky earth leather, and finishes with full flavor of yeast. Nice integration of flavors. The palate is medium bodied, soft carbonation, unfiltered mouth feel and pleasant citrus and yeast finish. Really nice, thanks for picking this one up Craig.

Bottle thanks to Chow. Pours a hazy yellow with small white head. The aroma is oak and wine. Medium mouthfeel with strong wine and grape, light oak, dry finish.

Bottle thanks to Chow. Pours a cloudy gold with medium white head that lasts. The aroma is strong lemon zest and oak. Thin mouth, juicy fruit, nice oak, tart finish, really enjoyed this one.

Glass @ Casey March 2015 release. Pours a hazy yellow appearance with a white head. Aroma is fairly herbal with some cheese, cobwebs, and lemon. Moderately sour. A touch bitter. Light pine, cheese, lemon, and grass in the flavor. Great beer but I think I preferred both other renditions a little better.

Glass @ Casey March 2015 release. Pours a slightly hazy yellow appearance with a white head. Aroma of cheese, oak, funk, lemon, horse blanket, and dust. Moderately sour. Low sweetness and bitterness. Nice lactic element with some tart lemons, grass, and funk. Some acidity on the finish. A hint of corn which I seem to get in a lot of Casey beers which I wonder if that comes from the oak fermentation. Anyhow, this is a great beer. Not Colorambic good but it shows some fucking promise and pretty good at the moment. (4.1)
Update from 3/23/15 bottle. Aroma is packed with funk and a ton of cheese. Bright, tart flavor. Juicy. Super funky. Awesome. (4.5)

Glass @ Casey during March 2015 release. Cloudy yellow appearance with a lasting white head. Aroma has some cheese, lactic acid, cobwebs, somewhat heavy oak, and lemon. Medium light body. Low sweetness and bitterness. Moderately sour. There isn’t much whiskey but there is a notable oak presence and a little bit of tannins. Cheesy and juicy. Best beer so far by Casey that I’ve had. This is getting close to how good Colorambic is which is Jesus Juice. Only one of the 50+ Hill Farmstead beers I’ve had is better than Colorambic. I hope these keep getting better. Great beer.
