In 1991, we began to produce meads, which are the foundation of our business. Our production technology has been built on the solid basis of old Polish traditions and recipes.
The company employs 16 people.
The owner is Maciej Jaros. His son, Marcin, is the chief technician. Marcin’s wife, Monika, is in charge of the quality control department and the laboratory. Another son, Bartłomiej, handles the technical department.
Maciej JarosA second section of the company deals in the production of useful and decorative ceramics (packs of honey and mead, honey drinking vessels, etc.).
Our meads are produced with natural methods, without preservatives, enhancers, artificial colors and flavors. The raw material for their production is bee honey, water and herbs. Its outstanding and unique taste is reached during several years of aging.
We were first in the production of fizzy mead. „Lipiec Perlisty” is named due to the length of time it takes for the honey to ripen (a few years). It was subjected process of saturation.
The main types of meads produced by our company:
Półtorak – formed by mixing one part honey with a half part water. Due to the high concentration of sugars, fermentation takes a long time and mead matures after about nine years of aging.
Dwójniak – formed by mixing one part honey with one part water. Dwójniak is a sweet honey with maturation lasting more than four years.
Trójniak – formed by mixing one part honey with two parts water. This is semi-sweet mead, with maturation lasting around a year.
Fruit meads are produced by replacing at least 30% of water for fermentation with fruit juice. Dwójniak Maliniak is formed by the addition of raspberry juice. Dwójniak Jabłkowy is formed with the addition of apple juice. Półtorak Gronowy is formed by adding grape juice to the mead.

Bottled. An amber mead. The aroma has strong notes of honey. The flavor is sweet with strong notes of honey as well as some flowery notes and vanilla.

Bottle as shown ($36.99), but has red wax. Marked as bottled 07-11-2008. Pours with a clear, but deep brown body. My god, amazingly strong legs That appear to be glued on! Aroma is pungent across the room. Oak, maple, sarsaparilla, honey (duh), oak, brown sugar, light smoke, fennel, vanilla. Smells like an alcoholic and well crafted rootbeer. Wow, that’s rich. Oaky and extremely complex. Spice, molasses, brown sugar, fennel, eucalyptus, sarsaparilla, tannic. Syrupy and pleasingly thick with just a hint of alcoholic burn to remind you to not chug the rest of the bottle. Nice botanicals! A bit sticky, but lovely!

75 cL ceramic bottle, courtesy of fiulijn. Pours deep amber with no head. Aroma is dense wooden and wineous to dark fruity, Phenolic too. Sweet, fruity, honey and slight herbal. Lingering sweet and honey flavoured into the finish. Nice.

Bottled on 2008-11-14. Pours with a deep copper body and super strong legs. Aroma of alcohol, cocoa powder, chocolate covered raspberries, oak, overripe fruit and some orange zest. Smells very similar to KRE, but tastes nothing like it (in a more drinkable way surprise, surprise!) Wow, this is some sweet stuff! Sweet, syrupy, maple, oaky, brown sugar, raspberry, marzipan, lightly herbal and very worth while for $30. Raspberry seeds and a light hint of tobacco in the long aftertaste. Syrupy as hell. One heck of a sweet mead!

The thing with these ceramic bottles from Maciej Jaros is that they always appear to be half empty; I measured it, and it contains 70cl, quite close to the label content of 75cl.
It has a cherry-amber color, slightly hazy. Mild aroma of honey, caramel, alcohol; very light herbal presence too. Liquor-sweet thick body, with sweet caramel and honey flavor, it reminds the sweetness of a ripe banana; it has the subtle complexity of old liquors; the alcohol is completely hidden; just in the end there is some mouth warming. It’s a straight-forward Mead, in the Polish (sweet) style, but very harmonious.

October ’09 O-Town Throwdown Another wow to Cheeseman for bringing this gem. Five year old in oak. Pours amber clear, thick oily coating on the glass. Lots of honey, leaving an amazing sweet sticky palate mixed with some floral herbs. Hard to describe this mead, sure does not feel like 16%, sips slowly, very sweet, lots of honey goodness with nice blend of oak. This is a magnificent mead.

Dark color, brown with morello cherry shades. The aroma is intense, sweet, with caramel and light fruits, light Madeira wine, plums, alcohol. Syrupy sweet flavor, honey, lightly oxidized, fruits (raisins, strawberry juice and plums); there is the right acidity to contrast the sugars; long final, sweet and warming. Extremely powerful, excellent.

It pours a hazy hamber color. Sweet aroma, alcoholic, with honey and apple juice, Calvados; liquor-like. Very sweet flavor, syrupy, with a mix of honey and apricot marmalade. Even sweeter and marmalade-like to the end; the alcohol is beautifully hidden. Not complex, but powerful, balanced and extremely enjoyable (if you have a sweet tooth).
