Monasteries have been brewing as far back as the sixth century to provide sustenance and benevolence to the communities they served. Water-borne epidemics during this period were commonplace, and the boiling of beer during the brewing process, made it a far healthier option than the town’s water supply.
So Monks Brewed.
What made monastic breweries different was that the monks brought patience, process and dedication to the practice of brewing. At Monkless, there are no monks, but this is our devotion. We practice patience to perfection in our brewing process, and focus exclusively on Belgian-style ales.

If you like Bavik Pils you will like this. Gold body with thick white head. Hay aroma. Malty body with herb tang.

On tap pours out golden topped with a white head. Nose is nice light Belgium spice some grain and hops. Taste is more of the nice sweet belg malts some spice and a nice light hop.

Can - lightly hazy gold - nose of dusty and spicy Belgian yeast, floral hops, crackery malt - medium body, creamy texture - dry on the approach, with light sweetness on the back end - peppery, light minerality, moderately estery - finish is brightly fruity and moderately bitter - reminiscent of Delirium Tremens and Duvel, which I suppose is what they were going for, so high marks on that end.

Pint can - lightly hazy gold - moderate lace - flavor is nicely dry for an american rendition - however, the hop flavor and bitterness are the primary focus, so much so that the belgian yeast character is almost completely washed out - if I came to this blind and you told me this was a straight-up IPA, I would believe you - on the back end, especially as it warms, you do get a little dusty and pepper yeast, but this does not have the yeast complexity I would look for in the style, which is too bad because I love how dry it is.

Pint can - medium amber, lightly hazy, moderate lace - nose of crackery malt, fruity esters, light peppery spice - flavor is medium dry and heavy on the clove and banana, presenting more like a dunkelweizen than a dubbel - lightly peppery on the tail end, finish with honey and bread - it’s alright - too much effing banana.

On tap pours out cola brown topped with a tan head. Nose is sweet berries some pitfruit and spice. Taste is more of the nice sweet berries rich malts pitfruit and spice.

16oz can from Boise Co-op. Dark golden pour, mild haze, foamy head fades to thin cap. Aroma is a nice balance of yeast and malts. Taste is malty, sweet, the Belgian yeast adding nots of sourdough and honey. All this leads to a nice mild crisp bitterness at the finish. Smooth, silky textures.
