Description
Pastore Brewing and Blending produce fresh and aged sour and wild beers.

The fresh series looks at accessible, fun, modern takes on mix-ferm brewing, utilising Kveik and Lactobacillus co-fermentation in fruited Waterbeach Weisses, Sour IPAs and Pastry Sours.

The cellar series is built around our house (mother) culture of Brettanomyces and lactic acid bacteria. We blend with different bases to produce an exciting range of aged wild ales, some in stainless steel and some as part of an extensive barrel program and blendery. Many of these beers are blended on fresh fruit in season.

Christ, a can of beer can do the rounds! This whole one was from Beer Central, Sheffield. Pours like port. Fine, deep pink head. Nose has a bit of a cherry pie thing. Blueberry yoghurt. Sweet lemon. Custard. Taste is tart and a little dry. Some vanilla sweetness on the lips. Bright and fresh and cleansing mouthfeel. Fine, brisk carbonation. Tart and bright berry fruit finish. Nice one.

22 June 2021. At Uiltje Taproom, Haarlem. Shared with the lovely Anke! Tap. Hazy yellow, small, frothy, white head. Fresh aroma of passionfruit, guava, yellow nectarine, papaya, lychee, Greek yoghurt. Taste has very fresh sour passionfruit flesh & guava, sweetish stonefruit, lactic and lime-like acid edges over doughy maltiness. Tart, yellow-fruity finish, juicy passionfruit along end-of-stonefruit. Medium body, creamy texture, average carbonation. Amazingly good and fresh, reminiscent of our encounter with the Zichovec Sour Passion Fruit 12. Damn son!

Can at home in Hackney - picked up via HOTM. Pours clear gold with a fading, foamy white head. Moderately sweet with notes of pale grains, a slight smoky off note, biscuits, white bread, straw, a slight chlorophenol note. Light bodied with fine, massaging carbonation. Finishes with further crispy grains, doughy biscuits. So so.

440ml can. Hazy, dark pink to purple colour with huge, frothy to creamy, moderately lasting, minimally lacing, white head. Fruity, tangy, and slightly funky aroma, notes of blackcurrant and sauerkraut, a touch of mustard seed, old lemon peel. Taste is sour, fruity, tangy and slightly funky, notes of sauerkraut, blackcurrant, old lemon peel. Creamy-watery texture, astringent palate, medium, prickly carbonation. Quite sour, needs a little time for acclimatisation, very refreshing - good.

Pours unclear yellow, medium sized white head. Scent is full, passion fruit, intensely so. Taste is full, tart, PF, very dry, bit funky, malty. Nice. Doesn't seem as simple in it's sourness as most other examples of this type of beer. Easy drinker, fairly complex.

On tap at Assembly Rooms Vocation Leeds . Cloudy pale gold yellow colour lasting white head. Strong lemon lemonade aroma. I did like it. a bit sharp as you would expect. third of a pint enough. OK though. sharp acidic lemon . could put this in a G&T
