The fresh series looks at accessible, fun, modern takes on mix-ferm brewing, utilising Kveik and Lactobacillus co-fermentation in fruited Waterbeach Weisses, Sour IPAs and Pastry Sours.
The cellar series is built around our house (mother) culture of Brettanomyces and lactic acid bacteria. We blend with different bases to produce an exciting range of aged wild ales, some in stainless steel and some as part of an extensive barrel program and blendery. Many of these beers are blended on fresh fruit in season.

ABV: 6.0%. Murky - muddy matt medium orange colour with a average, frothy, good lacing, mostly lasting, off-white head. Aroma is moderate malty, wheat, moderate to heavy hoppy, citrus, lemon, lime, fruity hops, sour fruit - sour citrus. Flavor is moderate sweet, light acidic and bitter with a average to long duration, fruity hops, citrusy, tart - sour, kveik yeast, citric, lemon sherbet, lime, dry. Body is medium, texture is oily to watery, carbonation is soft. [20200707]

3/7/2020. Sample courtesy of minutemat, cheers Mat! Pours very dark brown with a small bubbly off-white head. Aroma of dark and sour fruits, yeast, wood and leather. Moderate sweetness and tartness with a slight salty edge. Moderate body and average carbonation. Developed a odd slightly sicky edge. Enjoyed it, aside from that.

Bottle from Hoptimism. Almost black colour with a thin tan head. Aroma and taste have chocolate and sour citrus orange. Full body.

375ml bottle sophiesbeerstore.co.uk. Pitch black pour, settled foamy dark beige head. Aroma of soy, leather, seaweed, wild yeast. Taste has lovely wild touches, does have a sea-air feel though that could be due to the programme on Scotland I'm watching, seaweed, soy, leather, gently sour. Excellent complexity, really nice sipper this.

Can at home in Hackney - sourced from the Trembling Madness online. Pours unclear dull gold with a small, frothy white head. Not bad overall, has some decent citric bite, moderate acidity, lemon zest, piney bitterness, grapefruit pith. Medium bodied with delicate, massaging carbonation. Quenching finish, more pine needles, zesty citrus fruits, lime and lemon. Good stuff overall.

440ml can. Glowing unclear orange appearance with good white head. Interesting layered complex kveik overall.. hornindal strain is prominent but could be more harmonious with the lacto. Still, nice fruity sipper with an easy-going sour edge.

Bottle at home in Hackney - sourced from the Trembling Madness online. Pours almost entirely clear, honey-gold, with a foamy white head that settles into a cream. Excellent beer, lightly sweet, with moderate tartness, some citric bite, mellow funk, straw, salt, lemon. Light bodied with moderate, massaging carbonation. Clean finish, fairly dry, with quenching acidity, more lemony tartness. Exceptional.

Bottle from RAD beer. Opaque golden colour with a slim with head. Slight citrus apple aroma with earthy yeast. Taste tart to sour. Crisp slight dry to tart.
