Description
Pastore Brewing and Blending produce fresh and aged sour and wild beers.

The fresh series looks at accessible, fun, modern takes on mix-ferm brewing, utilising Kveik and Lactobacillus co-fermentation in fruited Waterbeach Weisses, Sour IPAs and Pastry Sours.

The cellar series is built around our house (mother) culture of Brettanomyces and lactic acid bacteria. We blend with different bases to produce an exciting range of aged wild ales, some in stainless steel and some as part of an extensive barrel program and blendery. Many of these beers are blended on fresh fruit in season.

Can from rad beer. Hazy reddish colour with a slim head. Aroma and taste are citrus tart. Slight hints of saltiness. Crisp body.

4/4/2021. Can shared at the first post-lockdown Ipswich beer share. From 3at3, Ely. Poured clear pale gold with a small frothy white head. Aroma of raw unripened passion fruit, kaffir lime, citrus, slight mucky edge - not in a bad way. Light sweetness, medium bitters, heavy sour. Moderate body, average carbonation. Tangy, dry and sour finish. Most around the table thought this was very nice.

Panda at home, thanks to SHIG, 03/04/21. Black with a decent tan cap that dissipates to a swirl. Nose is dusty fruit rinds, funk, dungy, roasted notes, light smoke, earthy. Taste comprises wood must, dark fruit rinds, spice, tannins, oak, funk, dried fruit rinds, light spice, ashen tones. Medium bodied, fine carbonation, semi drying close with a balanced acidic twist tinged with light smoke. Decent enough dark sour.

Panda at home, thanks to SHIG, 03/04/21. Very light haze on a Lucozade orange pour with a fast collapsing white cap. Nose is tarte strawberry, pink berry sherbets, strawberry yoghurt, gooseberries, damp straw. Taste comprises strawberry bootlaces, strawberry sherbets, pink berry fizz, grains, damp cloth. Medium bodied, fine carbonation, light drying close with a balanced puckering edge. A solid well made sour.

Panda 🐼 at home thanks to SHIG. A oily nutty brown coloured pour with a halo of dark tan head. Aroma is bitter chocolate, zesty orange oil, funk, woody funk, horsey. Flavour is composed of big citric acid, big pucker, lemon juice, hint of choco, mouldy funk. Palate is big clean bitter pucker, funk, moderate carbonation. Good.

Panda 🐼 at home thanks to SHIG. A mostly clear peachy orange coloured pour with a hal of of pink head. Aroma is nice fresh woody strawberry, melow funk with the prickly edge, jammy fruit. Flavour is composed of super tart, prickly pear, granny smith apple, stalks, fizzy haribo cherry. Palate is super clean tart, pucker,. fizzy carbonation . Good fun .

21/4/2021. Bottle sample courtesy of SHIG, cheers! Pours black with a small bubbly off-white to beige head. Aroma of orange, citrus, yeast, roasted malts, herbs, touch of ash and wet walnut with a hint of liquorice. Moderate sweetness and moderate sour. Touch salty. Medium body, soft carbonation. Tangy tart finish. Pretty good.

Aroma of strawberry sours, curdled strawberry and vanilla yoghurt, acidic lemon juice, touch of caramel. Light sweetness, moderate bitterness, heavy sour. Moderate body, oily texture, average carbonation. Good stuff.

Bottle sample at a tasting at Max's place. Cloudy pale yellow. Lactic, apple, citrus, some funk, tart, juicy. Really good and refreshing.

Bottle: Poured sludge brown with a bubble light brown head. Aroma is roasted malts and orange. Taste is tart fruit, orange, roasted malt comes in, some smoky ash.
