Pastore Brewing and Blending produce fresh and aged sour and wild beers.
The fresh series looks at accessible, fun, modern takes on mix-ferm brewing, utilising Kveik and Lactobacillus co-fermentation in fruited Waterbeach Weisses, Sour IPAs and Pastry Sours.
The cellar series is built around our house (mother) culture of Brettanomyces and lactic acid bacteria. We blend with different bases to produce an exciting range of aged wild ales, some in stainless steel and some as part of an extensive barrel program and blendery. Many of these beers are blended on fresh fruit in season.

Sample thanks to Grumbo: Poured an unclear golden with a bubble white head. Aroma is passion fruit, a little pungent. Taste is bitter sour passion fruit, puckers up the lips. Very solid!

Bottle shared in HW - cheers to Fergus. Pours lightly hazed gold with a creamy white head. Light sweet flavour with mild tang, biscuits, pale bread, lemon, wheat flakes. Light bodied with fine to average carbonation. Lightly tangy finish, some citric notes, a little yeast, wheat. Tasty.

440ml can, bought at Vinmonopolet Langnes. Shared with Finn. Creamy pinkish head diminishing over a muddy reddish body, poor lacing. Moderate berry skins on the nose, semi-sweet. Flavoured with berry fruit, hints of strawberries and raspberries, kveik yeast( beneath. Rather sweet berry-fruit to the ending. Mouthfilling. Shared bottle at Pass trappå kjellerbryggeri 13.05.21. Ebony. Some brown head. Sour aroma and taste of sour coffee, green coffee beans, grapefruit and tobacco. Dry and acid mouthfeel.

Can online from Cloudwater. Pours hazed pale golden with a white cap. Aroma: watermelon, pomegranate, minerals. Taste: fresh, clean, light to moderate sharp/sour, tangy fruit, dry-ish. Light yo medium body with spritzy carbonation.
