Pastore Brewing and Blending produce fresh and aged sour and wild beers.
The fresh series looks at accessible, fun, modern takes on mix-ferm brewing, utilising Kveik and Lactobacillus co-fermentation in fruited Waterbeach Weisses, Sour IPAs and Pastry Sours.
The cellar series is built around our house (mother) culture of Brettanomyces and lactic acid bacteria. We blend with different bases to produce an exciting range of aged wild ales, some in stainless steel and some as part of an extensive barrel program and blendery. Many of these beers are blended on fresh fruit in season.

Can. Xmas gift from the missus. Archer Road Beer Stop, Sheffield. Looks like tinned peach juice. Nose has loads of pulpy fruit, particularly mango and passion fruit. Lemon sorbet. Bit of a Mini Milk thing. Taste is tart and super fruity. Plenty of juicy sweetness. Fresh and clean on the palate. Drinks like pop, especially considering the 7%. Tart and fruity finish. Lovely.

375ml Bottle SophiesBeerStore.co.uk. Pitch black appearance, thick deep brown head. Aroma presents deep layered dark malt, rich chocolate. Taste continues along similar lines, slick, oily and palate-coating with additional soft roast and dark fruity moments. Excellent stout.

Pink. Sour and tart, puckering. A bit sweet but fresh, peach, raspberry and lime. Never heard of blood peach. Very nice.

Bottle at home in Hackney - picked up from Premier Hop. Pours deep red with a fading, foamy pink head. Lightly sweet with bracing acidity, good salty bite, lots of fresh and raw cherry and raspberry character, a bit of lemony twang too. Light to medium bodied with spritzy carbonation. Quenching finish, lightly drying, more strong berry tartness. Solid.

440ml can – Pours a cloudy yellow-gold colour with a small lasting fine foamy white head. The aroma is peach and apricot with some zesty citrus notes. A tart fruity taste, unripe stone fruit flavours with a crisp dry sour finish.

Can. Archer Road Beer Stop, Sheffield. Xmas gift off the missus. First beer on Boxing Day, and easing gently back in to it. Hazed straw colour. Slim ring of white. Nose has bright mineral. Melon. Pomegranate. Passion fruit. Lacto twang. Taste is sharp and lightly tart. Pretty dry with a touch of sweetness on the lips. Light and refreshing on the palate. Fine, brisk carbonation. Nicely juicy. Tart and light dry finish. Disappeared in seconds.
