DESTIHL was founded on the promise of supporting flavor and boycotting bland. We're an independent, production brewery that was established in 2013 in Bloomington-Normal, Illinois to brew beyond the confines of typical beers. Our team combines centuries-old global brewing traditions and new American craft brewing ingenuity & artisanship to produce a wide array of beers for every palate. We brew more styles of beer because we have a passion for brewing and because you have a passion for unique, craft beers. The result is a diverse offering of intensely flavorful beers that are anything but bland, from our award-winning WiLD SOUR Series, barrel-aged Saint Dekkera® Reserve Sour Ales and Dosvidanya® Russian Imperial Stout, to our many Belgian-style beers, IPA's, other wood-aged beers, classic styles and exciting seasonals. DESTIHL has become a brand, but we have not strayed from our roots. We take pride in our values and will continue to grow and support our local community. On tap at Pap pouring up with a slightly hazy amber body that supports a tiny light tan ring of foam. The aroma offers up sweet malts and some molasses and then a touch of pale like malt sweetness mixed with a modest degree of sweet ripe cherries. The taste starts smooth with thick malt sweetened ripe cherry meat and then it picks up malts and molasses nuanced by a pleasing level of a rye bread like twang that is fully tempered and evened out by the malts but sort of enhanced as well by a thin layer of somewhat spicy to pine like hoppiness. Nice well rounded barleywine.

Draft @ Haymarket Pub & Brewery, Chicago, IL. Pours a pale amber golden color with a small white head. Has a fruity malty piney hoppy bitter aroma. Fruity malty piney hoppy bitter grapefruit flavor. Has a fruity malty piney hoppy bitter grapefruit finish.

Tap at Dexters. Filtered looking yellow-tan body. Steady, creamy white head. Creamy and mellow, pretty true to style. Refreshing, light, refined citrus tones. Really perfect, delicate mouthfeel, a touch of zesty champagne yeast. Not unlike a Belgian Pale, but a doughier mouthfeel. Excellent, well exceeding my expectations.

GABF 2013. Pours a slight bit hazy, orange appearance with a khaki head. Lemon, pineapple, tropical fruity, light guava, oaky, vanilla, bretty aroma. Fairly dry and oaky, a bit herbal, funky/bretty, pineapple, lemon citrusy flavor with a dry lingering paw paw finish. Cheers Ratman!

GABF 2013. Pours a hazy golden yellow appearance with a white head. Holy shit, this mofo has a bunch of funky cheese, cobweb, and basement aromas. Lemon, lactic, vanilla, hay, straw, wheat, moderately sour flavor with a bit dry finish. Fucken cool beer. You can’t fake the funk, bro.

GABF 2013. Pours a hazy reddish orange appearance with a tan head. Tangy, vinegar, black cherry, raspberry, oaky aroma. Pretty fucken sour, dark berry, cherry, acetic flavor that finishes again quite sour. Pretty good for what it is but a bit too strong for me to really enjoy it.

GABF 2013. Pours a bit hazy golden orange appearance with a white head. Very tangy, raspberry, cherry, lightly acetic, a bit funky aroma. Really fucken sour flavor with notes of vanilla, blackberry, raspberry, vinegar, and light wood. Fruit isn’t overly strong but is present. Sour to the point that it would be hard to drink too much of this.

Sampled at GABF 2013. Pours a clear gold with some white head. Nose of lemon, grass, vitamin c, grapefruit. Flavor has a ton of acid, vitamin C, lemon, grass. Refreshing finish. A touch more balanced.

Sampled at GABF 2013. Pours a hazy gold with lots of white head. Musty nose, some wood, grass, pithy, lots of acid. Flavor is very acetic, grass, pithy, vitamin C tablets. Acetic finish. Too much acid.

Draft at Haymarket, Chicago. Pours clear amber with an off white head. Aroma of malt, caramel, fruits and citrus. Flavour is moderate sweet and bitter. Medium bodied with soft carbonation.
