At DESTIHL, we brew more styles of beer because we have a passion for brewing & because you have a passion for unique, craft beers. Cheers!

DESTIHL was founded on the promise of supporting flavor and boycotting bland. We're an independent, production brewery that was established in 2013 in Bloomington-Normal, Illinois to brew beyond the confines of typical beers. Our team combines centuries-old global brewing traditions and new American craft brewing ingenuity & artisanship to produce a wide array of beers for every palate. We brew more styles of beer because we have a passion for brewing and because you have a passion for unique, craft beers. The result is a diverse offering of intensely flavorful beers that are anything but bland, from our award-winning WiLD SOUR Series, barrel-aged Saint Dekkera® Reserve Sour Ales and Dosvidanya® Russian Imperial Stout, to our many Belgian-style beers, IPA's, other wood-aged beers, classic styles and exciting seasonals. DESTIHL has become a brand, but we have not strayed from our roots. We take pride in our values and will continue to grow and support our local community. We promise to deliver on these uncompromising beliefs. Every beer we brew is unique. So, whether you share it or hoard it, we hope you enjoy it. After all, you deserve it.

On tap at DeStihl. Amber-brown body, oily beige head. Straightforward and well done. Toasty malt tones, balanced by some piny hops. Average brewpub stuff.

On tap at DeStihl, Filtered orange-tan, thin off-white head. A really nice session beer, refreshing, with a bold hop character. Spicy, peppery, grapefruit..lots of hop depth. A really great example of the style. Clean, toasty.

On tap at DeStihl. Brown-black. Pronounced pumpkin pie spice aroma. Quite well executed. Not overbearing with the dark malts, just the right touch. One of my favorite pumpkin beers I’ve had recently.

On tap at DeStihl. Deep black body, lasting beige head. A relatively mild, doughy interpretation. Still has that thick peppermint patty flavor, minty. Subdued carbonation. Quite fresh, a nice straightforward beer.

On tap at DeStihl. Red black. This really tastes sour and infected. Its not paritcularly bad though, I like a sour Porter sometimes. Loses points for stylistic failure though, but gains them back for being reminiscent of the NG Old World Porter. Oily, sour residue in the finish. Odd, not so impressive.

On tap at DeStihl. Chunky brown amber, thick beige head. Smooth and true to style, creamy, thick yeast tones. Quite well done, very refreshing. Medium bodied, well balanced, a nice beer, but not quite World Class.

Notes from last August’ Midwest Brewers Fest. Inadvertently, I get to give this beer a ranking. Here goes: Some good, sour fruit in its nose, pours with a lot of floaties in it. Nice amber color with a little foam to the taster glass. Brisk, tart smell. Taste is, whoa! Warhead type sourness. Gotta like sour to give it this kind of rating. Not much there besides sour fruit; maybe a background of wheat malt. If you want your beer sour, this series is definitely worth seeking.

Bottled@chriso. Hazy golden colour, small white head. Aroma is sour wood, some tartness and mild fruity notes. Flavour is sour/tart wood, mild strawberries and quite mouthdrying. Very pleasant and tart notes.

Pour is a bright copper with a small white head. Aroma is a nice floral, grapefruit, citrus hop. Flavor is about the same lots of hop bitterness with a big citrus note. The hops push all the malts to the backround but I think that is what they were going for here. A enjoyable hop bomb.

Enjoyed on tap at Goose Island Stout Fest 2012 in Chicago, IL. I like butterscotch, so I liked this brew very much. Appearance is pitch black, moderate consistency, no head. Aroma of butterscotch, very sweet, very rich and decadent. Taste like a smoky butter scotch, bit of chocolate, potent alcohol flavor, pretty good stuff.
