Pale amber-brown. Medium whiskey on the nose, with raisins, vanillins. Medium body for style, and a bit of a woody finish. Not the most refined barrel character but a solid base beer makes this work.

Pale and opaque. Also phenolic, though. Soft body, more phenols on the palate.

On tap at Farmhouse Fest 2025, pours a clear dark mahogany, no head. Nose is full of bourbon barrels, spicy rye, earthy notes, and bready caramel. Flavour is boozy, with lots of bourbon barrels, spicy and earthy rye, and bready caramel. Nice rye spiciness and barrel character, supported by a good malt base. Excellent.

On tap at Farmhouse Fest 2025, pours a clear blonde with a small white head. Aroma has plenty of Cheerios and rustic saison yeast. Flavour is pure THP—massive Cheerios bomb—with rustic saison yeast underneath. Lots of Cheerios off-notes. Not good.

On tap at Farmhouse Fest 2025, pours a hazy blonde with a small white head. Aroma brings gentle rustic saison yeast and a touch of earthy hops. Flavour is dry, with some rustic notes and earthy hops. Rustic, dry, and earthy. Solid.

paque, pale purple, no head at all, nice berry aroma, touch of brett, vaguely vinous note. Tart, light brett, juicy berry. On the clean side for Jackknife.

Dullish pale. Medium head. Kind of thick and sticky. A bit fruity, soupy, so this didn’t quite get there on the fermentation. The hops have medium bitterness but they’re not all that expressive.

Gold, bright, lightly vinous aroma, with a fair bit of pale malt…almost like a helles, if it was served from a riesling barrel at the turn of the 20th century. Probably in Unterfranken because there’s a fair bit of hop here as well. I have to say, sometimes Jackknife beer takes my brain places I would never have otherwise gone. There's not a lot of breweries that can say that.

Hazy amber, thin head, this has a big fruitiness, it’s quite vinous. Fruity, bit of brett, this is an oddball with maybe a rummy note in the finish.
