Description
Situated in the rural village of Hullavington, Wiltshire, we are a family-owned brewery where quality comes first. Fresh air and abounding countryside provides the ideal setting to produce a perfectly balanced product (Elmers, Mighty Monk and Habit are all award-winning ales). First brewed in February 2014. The brewery changed hands in early 2020.

Flying Monk Brewery began a new chapter in 2020 when it was acquired by the farm on which it is located. This has not only allowed us to waste less – for example, using the by-product from brewing (i.e spent grain as cattle feed) – but we have more time to focus on what matters most: making great beer for our local community.

Cask at the Post Office Vaults, Birmingham. Poured a clear medium amber with a frothy white head and some clingy lace. The aroma is light lemon citrus hop. The flavour is moderate bitter, light sweet with a light floral hop, acid citrus palate and a lingering bitter finish. Medium bodied with soft carbonation.

GBBF Day 1. Cask. Almost clear gold - amber beer, thin pale cream colour head. Palate is light, semi dry. Modest fine carbonation. Light pale malts, some sweetness. Modest marmalade. Mild lemon bitterness. Light finish. Okay.

Cask at gbbf 2015 day 4. Clear golden orange coloured pour with a loose white head. Aroma is mineral, slight sulphur, semi sweet. Mint and grassy hop. Flavour is light caramel, biscuit, grassy and mineral hop. Palate is semi sweet. Moderate cask condition. Boring.

From cask. Pours cloudy orange with a small white head. Aroma is mild toasted, grassy straw hops. Bitter, fruity and toasted malty. Dry and toasted finish.

Pint from the Raven, Bath. Amber colour with a thin off white head. Suprislingly hoppy and fruity aroma, taste well balanced bitter sweet.

Cask-conditioned on gravity at Swindon Beer Festival, 23/10/2014. Deep gold with a slight, white, head. Fruity aroma of tangerines and hedgerow fruits. Flavour had more fruits, some biscuity mlats and decent, bitter, finish. Good.
