Description
Tijdens het testen van heel wat didactisch materiaal vonden wij dat de huidige biersector wat te weinig durf toont, dat de smaakprofielen vaak wat te vlak zijn. Daar willen wij graag verandering in brengen. Wij willen iets creëren wat mensen bijeen brengt, iets waarover gesproken wordt, iets wat wij lekker vinden, iets waar wij onszelf wat in kwijt kunnen en onszelf in kunnen terugvinden.

Wij zijn Kristof ParDON, Roel BOSmans en Dirk VALKenborg en samen vormen wij brouwerij Donbosvalk.

Het hoeft geen betoog dat wij alle drie liefhebbers zijn van het gerstenat en we hopen jullie te kunnen laten genieten van ons bier, evenals wij ervan genieten om het te creëren. We nemen jullie mee op onze queeste naar unieke smaken, geïnspireerd door authentieke en lokale ingrediënten, op punt gesteld in ons proeflabo met de nieuwste technieken in de Brouwerslaan te Runkst Hasselt.

In samenwerking met Luc Festjens van brouwerij Den Toetëlèr staan wij garant voor een kwalitatief, ambachtelijk en vooral lekker product !

Grote dank gaat uit naar Jan Quintiens (Qwinn) die ons geholpen heeft met het ontwerpen van ons logo en onze etiketten.

Small white head over fully veiled orange beer; end of bottle solid yeast. Citrussy, lemon, ever so slightly smoked. Citrusyoghurt, gooseberry, lactic, wheat. Smoked, tastes as smoked Weizen, with clove, orange, banana, 1-4 guaiacol, wheat. Quite slick, good carbonation, oily. Suggestion to Schneider Weissbiere: this is "Mein Räucherbock" . Not really my thing, though. Thanks to Maarten!

33cl bottle from Prik & Tik Dranken Marlou. F: medium, white, almost good retention. C: deep gold, hazy. A: malty, apricot, honey, bit spicy, mellow fruity, toast, dough, banana, pear. T: full malty base, mellow fruity, honey, banana, bit clove, spicy, pear, light smoky touch yet not ideally balanced, dough, medium carbonation, medium dry on the palate, ok not bad yet bit dirty feeling.

The second beer from this new brewing company in Hasselt, capital of the province of Limburg (and the first brewing company there in modern times). Thanks to the brewer! Slow gusher, but manageable. Mousy, quite large-bubbled and coarse, off-white, regular, medium thick, slowly opening head on a misty, deep peach blonde beer with 'rusty' orange tinge and a suspension of dead yeast bits throughout. Aroma of indeed some faint yeast autolysis (sulfur), but luckily remaining largely covered under more flattering impressions of ripe peach, Brussels waffles, coriander seed, cinnamon apples and 'appeljenever' (an unintentional reference to Hasselt's reputation as a 'jenever city', perhaps), cloves, stewed turnip, banana, sugar bread, ripe pear, pineapple, apple sauce, allspice, honey, old dry ginger. Sweet onset, banana ester mingled with peach, pineapple and (over)ripe pear accents, fizzy carbonation (stinging a bit, but acceptable for a tripel), softish, fluffy body, bready malt sweetness covered in residual, very honeyish sweetness with the fruity aspects lingering; outspoken spicy phenols (4-vinyl-guaiacol) as well, clove- and a tad anise-like, supported by clearly added coriander-, allspice- and vaguely cinnamon-like spiciness, almost Christmas beer-like 'the blonde way'. Bready, earthy, bit 'dirty' ending (not surprising seen the load of dead yeast cells), warming brandy-ish alcohol (quite outspoken and even a bit burning in the very end - should have been better hidden!) mixed with lingering sweet banana ester and residual sugars, but balanced out - to a certain extent - by and earthy, slightly floral hop bitterishness. Typical sweet, spicy, boozy tripel, too sweet and not nearly hoppy enough for me personally, but acceptable for what it is: a commercially intended, traditionally Belgian-profiled sipper. If the yeast can be controlled a bit more and the beer gets a bit cleaned up, this will surely appeal to the Karmeliet- and other sweet tripel drinkers, at least from a local perspective.

One of the first beers by this new contract brewer in Hasselt, brewing at Toëtelèr apparently. Thick, dense and fluffy, snow white head over a lightly hazy peach blonde beer with ‘dirty’, almost brownish tinge, turning more misty but not all ‘dirty’ with sediment. Aroma of fried red apples, noticeable carbon dioxide (as if sniffing a freshly opened bottle of sparkling water), candied orange, caramel candy, acacia blossoms and even sweet perfumey jasmin flowers, white rum, honey, pineapple, carrot juice, brandy. Sweetish, fruity onset, impressions of ripe pear, pineapple and peach, bit stinging carbonation initially with clear minerally effects, slender and lean body; sweetish caramelly maltiness with some honeyish residual sugars on top, light bready sides, minerally effects persisting till the finish; light floral hoppiness appears alongside an orange water-like accent and some honey and banana aspects, before being enveloped in very obvious, white rum-like alcohol, with an earthy hop touch trailing behind. Perfumey, sweet Belgian tripel, accessible and clearly intended as a crowd pleaser, a tad too boozy, but otherwise correct.
