Cooperation between Girardin and Revelation Cat, in a series of young lambics tapped over green hop at beer festivals, in this case Nelson Sauvin. Unblended lambic so no head, lightly hazy orange blonde colour. The aroma shows, as expected, all the complexely refined lambic attributes of lemon pee, hay, dry sherry, straw, green apple, horseblanket and so forth, but is in this case a bit overshadowed by the green, fresh hoppiness from the Nelson Sauvin. Taste refined, ’malse’ lambic, very very fruity, sherry, hay, sour but in a gentle, more lactic than citric way, drenched in a green, crisp, bitter hoppiness that carries long into the finish; interesting to link lambic sourness to hop bitterness, but to my taste the latter was a bit too dominant.

Bottle split at Chriso, #4 of 50, big thanks to Kenny 10/07/14. Dark mahogany brown with a good sized light beige covering. Nose is tarte dark fruit, sour red berry mash, dank wood tones, spice, light caramel wafer. Taste comprises tangy dark fruits, woody rinse, spice, vineous licks, light apple orchard, citric vinegar light. Medium + body, fine carbonation, tangy dark fruit rinse in the close. Decent enough sour.

Bottle. An almost clear one, golden in color and with a small, dense, white head. The aroma is on the hoppy side, with grassy and flowery notes. Some butterscotchy notes. Caramel malts, some bitterness and grass in the flavor. Medium body and a soft carbonation level. Bitter finish. Not very interesting this one. Perhaps 100 days on the hops isn’t the best idea. 140816
