Description
While working for a bio-pharma company in Boston, John noticed that many employees of the company had previously worked for the Sam Adams Brewing Company. After inquiring further and touring the brewery, it seemed so obvious, as brewing and bio-pharma manufacturing are essentially the same process.

Both industries use fermentation to achieve their final products. In bio-pharma the protein and enzymes are harvested and purified and the rest is discarded, whereas in brewing we discard the proteins as waste and keep everything else. Once aged, it’s called beer.

Learning this peaked Johns interest, and finally, at the urging of Bill, he began brewing in 2013. Over the years John dreamed of opening a brewery. After many trips to European breweries, breweries across the US, and five years of nano-brewing, a real chance for the brewery to become a reality presented itself.

The owners of 623 Massachusetts, the Marsh family, wanted to lease the premises to the right type of family business with a good concept, so when John, Kathryn, and Bill came calling, the match couldn’t have been better. The Marsh family expressed that they had always thought the location to be a good one for a brewery, and so the Black Stag Brewery finally had a home.

16oz can pours out dishwater color topped with a white head. Nose is sweet grain some grass. Taste is more of the sweet grain honey and grass.

Shaker pint draft at Black Stag Brewery & Pub in Lawrence, Kansas. The pour is a slightly clouded brown, ruby with a small light tan head. The aroma is sweet nut, with a hint of cane sugar. The taste is sweet, bordering on cloying sweet, nut and soft roast malt behind that. The palate is medium bodied with soft carbonation and the sweet finish.

Draft. Golden body with a frothy white head. Aroma of pine, resin, toasted grain, grapefruit. The flavor is lightly to moderately sweet and lightly to moderately bitter. It finishes lightly sweet and moderately to heavily bitter. Medium body, watery texture, lively carbonation. The early sweetness is soon run over by bitter hops. Classic West Coast.

Draft. Cloudy, dull gold. Fizzy, white head, rapidly diminishing. Aroma of clove, toasted grain, light funk. The flavor is moderately sweet and lightly bitter. It finishes lightly sweet and moderately bitter. Medium body, watery/sticky texture, moderate carbonation. Like so many American saisons, this is a heavy-handed clove bomb. From its thick texture to its moderate carbonation to its lack of nuances, this is far afield from a classic saison.

Draft. Deep brown body. Tan nitro head. Aroma of roasted grain, chocolate, ash. The flavor is moderately sweet and lightly bitter. It finishes lightly to moderately sweet and lightly to moderately bitter. Medium body, watery/velvety texture, lively carbonation. Taste of chocolate, coffee, caramel. Nice balance.
