750mL brewed Sep 2019, bottled April 10, 2020, drunk 1/18/24 at the brewery. Clear deep maize-golden. Small, white head, quickly to ring. Really nice funk and poop, softened with time. Juicy acidity, plenty of oak and white wine. Not aggressive. Garden twine, or so the brewer says. For a lambic culture, this is very clean and under control. Juicy, bright, soft, citrus-laced white wine. Good texture with mineral and light salinity. Soft oak, more wine and lip smacking lactic character. Wow this came out really well and seems to have aged insanely well in four years in cold storage.

Brewery draught, 1/18/24. Clear golden. Large, creamy, white head. Strong retention. Floral, earthy, spicy, lovely hops, wow. Cracker and biscuit to give a crisp edge, with lager yeast fine sh replete with minerality and lingering soft lime. Juicy, lime-like, malty, rich white bread and light honey with light biscuit and low bitterness. Not quite what I was expecting, and I wish it was more bitter and crisp on the finish. It's like a soft, light, hazy NE pale ale.

2022 Brewery draught, 1/18/24. Hazy, bright peach, giant, thick, white head. Rich culture with salinity, earth, leather, heavy mineral, tons of biscuit and mellow lactic acidity. Good backing of round oak. Probably suggestive, but it smells like vegetal notes and salinity with plant like character. All of this sounds weird but it's great. Floral, earthy, definitely some plant character. Orange, pepper, soft, well-attenuated malts and fruity Brett and mellow lactic acids. Juicy in the end with light salinity, mineral and earth. Sublime stuff. Good acidity but nothing aggressive whatsoever.

Bottle thanks to Dan. Pours a dark brown with small beige head that lasts. The aroma is strong cocoa, licorice, vanilla, wood, bourbon. Slick body, strong vanilla, cocoa, roast, nice sweetness, light booze, enjoyed this.

750ml (thx, Ryan!) @ Matt's new place. Appearance: hazy straw with a white head. Aroma: lots of quite nice gin, botanicals, some fruity notes, oak. Taste: along the same lines, rustic notes, nicely balanced botanicals. Overall: good gin barrel-aged stuff.

Hazy and sort of beige colour. Not much head. On the nose, it's got some bugs, certainly some gin accent. The palate is light for the size, nice clean buggy accent, with a soft gin character as well. Drinks fairly well, the gin accents the saison nicely.

Poured from 750mL bottle (thanks Derek & JF). Hazy gold with small white head. Nice soft gin complementing the saison yeast, very nice. My favourite Freak Folk thus far.

750mL bottle, pours a hazy bright golden with a small white head. Aroma is full of wild bugs, gentle gin botanicals, and a touch of rustic saison yeast. Flavour is complex, with lots of nice, floral, gin botanicals, rustic saison yeast, wild yeast, and a hint of sugars. I usually don't like gin BA barrels, but this works great. Very good.
