Description
Wicklow Brewery was set up in 2014 as a result of the increasing demand for Craft Beer in Ireland and lack of suppliers at that time. Leigh & Ashley Williams who are also co-owners of the popular Mickey Finn’s Pub became aware of this growth market and were unable to source any craft beer for their own venue. After much research, they decided to build their own Brewery and produce beers on-site adjacent to Mickey Finn’s Pub. These beers would be sold on and off site, initially in keg format to the local hospitality venues.
Four years on and with major International Awards under our belt we are now canning and bottling and going nationwide with our beers. Our beers are on tap in over 50 venues and available in most hotels in Co Wicklow along with numerous off sales establishments.
With increased demand, we have purchased extra tanks which will double our capacity and we are very excited about the future of the ‘Wicklow Brewery’.
We are producing genuine craft beer, which is brewed and canned in the Brewery on-site in Redcross. We use our own well water and zero chemicals, brewing in small batches to enhance taste and character. Consumers can take a sensory trip to Wicklow Brewery, where they can take a Brewery Tour and afterwards indulge in some Food & Beer Pairing whilst aromas of fresh beer being brewed surround them as they Brewers work alongside them.

Can at Malahide Grand, 10th November 17. Pours a juicy hazy orange amber. Aroma is peach, tropical fruit, apricot. Taste is sweet, juicy, peach, apricot, a little pine. Would have liked a more bitter beer. Pretty good though.

Pours a clear golden amber colour with a small thin head that quickly disappeared. Aroma is mild, orange marmalade and malts, some light floral notes. Quite sweet, orange marmalade, a little caramel and more sweet. A light orange peel bitterness but not alot of hops and what there is plays second fiddle to the sweet orange flavours.

Yellow orange, light haze, frothy white head
Aroma is soft herbal, hop resins, slightly herbal, soft sweet malt underneath (suppose that’s what dank is...)
Taste as aroma, bit sweeter than expected, dab of orange, soft citrus, fairly bitter zest, dab of bitter herbal hop
Palate - Soft carb, medium body, good bitter sweet balance.
Overall - Maybe the best I’ve had from this brewery

Blonde, light haze, frothy white head
Aroma of fresh ginger, gingerbread, soft lemon, vibrant nose
Taste of fairly strong ginger, hint of lemon, light sweet pale malt, it’s basically a alcoholic ginger ale, simple flavours mainly ginger, clean
Palate - Soft carb, medium light, spicy ginger, soft sweet background. Finish as main flavour, quite a strong ginger and soft lemon linger
Overall - Fresh flavours but one bottle enough

Aroma of caramel malts, soft fruits, hint of toffee, caramelised orange
Taste of caramel, light toffee, caramelised orange, just as aroma, quite malty, not that hoppy
Palate - Soft carb, medium body, soft sweet. Finish of soft toffee, soft bitter linger
Overall - Should be in a 500ml bottle/can. More caramel malt than usual for a pale ale. It’s OK.
