375mL bottled 6/22/16, shared 4/13/17 with Nelson.
Bright cantaloupe-copper with a good clarity and an off-white head that fizzles to nothing rather quickly.
Soft caramel notes, perhaps even light brown sugar-like character mixing with light vegetal spice. I would never guess tequila, though it’s obviously not whiskey. Looking for it, it makes more sense and is quite satisfying once you know what you’re smelling. Super spicy, peppery, definitely smells like chili/jalapeno skin. Despite that, the pervasive minerality that inhabits HF sours softens things nicely and nothing seems aggressive or sharp. No alcohol noted either. Pretty low on the lime, for Brother Soigne, but I assume that’s just the time spent in the barrel. It takes some work, and definitely takes letting the beer sit for a while, but it’s interesting and enjoyable in its own right.
Honey, pepper, jalapeno and a very light, pleasing graininess comprise the first few sips. It’s spicy and yet has ample supportive malt to balance. Quite dry with minimal lime and all of the aduncts and barrel aspects melding quite harmoniously to produce light botanicals as well as chopped cucumber. Low, mostly engaging carbonation. Could use a bit more of the trademark Hill Farmstead creamy carbonation to really fill out the body and punctuate the finish. Unique, to say the least, and certainly enjoyable. Low-to-moderate tartness, with no alcohol or flaw.

375 ml bottle, thanks to Adam Chandler on this share. Cloudy yellow, thin fleeting head. The aroma is lime, citrus, and the lightest hint of a liquor. Would never come right out and say tequila. Has a strange cooked vegetable note. Aroma is not great.

Flavor is tangy orange and lime. Texture is bright, lively, and refreshing. Honestly, not sure how this is much different from the standard Soigné. The lime and orange is refreshing and thankfully the barrel doesn’t really show tequila much at all. A tiny tiny amount in the finish. That is actually a huge positive. Thankfully it tastes better than it smells.

375ML Bottle, Split 2 - ways with AFH

A - Nice cap pop, yellowish brown, a thin white head line.

S - The aroma is pretty hard to pin down. Without a doubt Soigne but there’s this moldy foot and old vegetable aroma that’s hanging over.

T - Hmmm, the lime & tequila do this dance and they pair up really well. It’s much more sour than it’s standard counterpart. No salt added? Lime juice is pronounced, orange juice, a little tequila

M - Very light, thin, not much carb

O - This is good, The aroma threw me off but it’s a nice beer.

2014 Bottle from Gambrinus...Batch 4 I believe. Pours a hazy gold with a finger of foam that lingers. Lovely apricot forward nose with pineapple and brett aromas. Clean and crisp with active carbonation. Lots of fruit that leads to a dry, fruity finish. Easy drinking and wonderful paired with food.
