Description
We are a brewery & distillery, located on a picturesque 100 acre farm in the small township of Ayr. When Cameron Formica and Jordan and Nolan Vanderheyden finished university, they were looking for something outside of the classic nine to five. They really wanted to do something hands-on that they could physically create. So in 2017 they founded Willibald Farm Distillery and Brewery.

Cloudy deep blond to bright yellow beer, practically no head. Aroma: very herbal, bit minty, peppery, funky, some tropical fruits, smoky touch. MF: ok carbon, medium body. Taste: bitter, resinous, bit fruity, very bitter, dry, hoppy, some tropical fruits. Aftertaste: bit sweet, alcohol, very fruity, tropical fruits, juicy, hoppy, very nice!

Can sourced from Beergium and drunk at home - New 🇨🇦 brewery ✅ - totally hazed murked up orange with a white head. Intense juicy fruity with passionfruit, tangerine, papaya, lovely mosaic blueberry accents chiming in, set upon a bed of sweet pillowy malts, medium body, robust hoppy finish, heard lots about these guys and does not disappoint. Lovely

(473ml can from 4th and 7, Toronto) Pours opaque deep yellow with a small white head and spotty lace. Aroma of dank mango, lychee, guava, pink grapefruit, musky and overripe fruits too, a little bit of cannabis, pretty juicy. Flavour is lots of floral, somewhat rindy tropical red fruit like lychee, mango, some passionfruit, pink grapefruit, citrus peels, balanced dankness, moderately sweet but not heavily so for style, some bready brioche type malt with a few cereals poking through. Finish is quite dry, typically crisp from Willibald, grapefruit peels and floral fruit notes with low bitterness and just a hint of the 10% ABV. Medium bodied, oily, moderate plus carbonation. Really nice brewing here, hard to make a TIPA seem crisp and refreshing but this does.

(473ml can from 4th and 7, Toronto) Pours moderately hazed deep gold with a thick white head and good lace. Nose is very dank, the cannabis side of Mosaic dominating, with peach preserves, orange and grapefruit, some wet pine. Flavour is quite dry overall for style, notes of peach, blueberry, grapefruit peel, light but structured cereals, earthy pine backbeats, a little malty sweetness and preserved orange fruits in the middle to finish, which is dry and lightly resinous bitter with lingering citrus and blueberry. Medium-full oily body with fairly spritzy but smooth carb. Damn nice actually, less ester-rounded than many contemporary ON DIPAs and has a touch of west coast vibes to it. Good expression of Mosaic.

On tap at Bar Lupulus, pours a clear pale golden blonde with a large white head. Aroma is perfectly bitter and grassy, with a great crisp bitterness, the right herbaceous character, and some straw. Flavour is clean and crisp, with straw, herbaceous notes, and gentle grassy bitterness. Clean, crisp and gently bitter. Good example of the style.

(473ml ca of DDH version from 4th and 7) Pours very milky pale yellow-gold with an average white head and good lace. Aroma of grapefruit and pale yellow citrus peels and a fair whack of pith, fruit rinds, some tropical florals, cut grass and fresh pine needles with a dank edge. Flavour is nearly bone dry with just a little residual sweetness on the attack; pink grapefruit dominates with lemon quite prominent, pulp and some peel with pithy dryness, slightly lemony-acidic even, crispy crackery cereals and clear minerality, fresh pine needles, a little grassy astringency but no hop burn. Light to medium bodied, smooth but moderately high carbonation. Nice one, the dry west coast-ish vibe is a nice contrast to the other main ON hop wizards. Refreshing even less-than-fresh.

Murky blond colour. Citrusy and zesty hops dominate, llike another Willbald I just had, this as well is very dry for the style; it has some bitter citrys / pithy bitterness in the finish. Ok beer, but not impressive.

Pale blond colour, murky. Wonderful aroma, dank and citrusy. The mouthfeel is too dry, a little sweetness would have greatly helped to boost the juiciness of the hops.

Can. Opaque, looks like hazy ipa. Thin head. The aroma showcases alcohol, and grapefruity hops. On the palate, just enough malt backbone, and this really helps. There's a fair amount of bitterness for a hazy iipa, and again the hops are grapefruity. Alcohol throughout, lending both dryness and bitterness. While I might want a brighter hop expression, it's got a really nice sense of balance that makes me want more than one. For this style, that's good.
