Description
We are a brewery & distillery, located on a picturesque 100 acre farm in the small township of Ayr. When Cameron Formica and Jordan and Nolan Vanderheyden finished university, they were looking for something outside of the classic nine to five. They really wanted to do something hands-on that they could physically create. So in 2017 they founded Willibald Farm Distillery and Brewery.

Bottle shared at yearly Fryslân tasting. Hazy yellow color, average sized white head that diminishes fairly quickly. Aroma is malts, white pepper, fruity a bit. Flavor is malts and fruity. Very dry and mineraly. Decent.

Drank at my Athens home from Strange Brew Taproom. Black with a short lived beige head. Aroma of roast, dark chocolate, licorice, coconut, coffee and caramel. Flavour is heavy sweet and bitter. Light full bodied with alcohol warmth and light carbonation.

473ml can. Murky, dark yellow-ish to orange, golden colour with average to huge, frothy to creamy, moderately lasting and lacing, white head. Resinous, piney and slightly citrusy, hoppy aroma, notes of pine, spruce, sweat, a touch of tropical fruit, woody pineapple, some lemon peel, lemon balm. Taste is moderately bitter, zesty, minimally tart, citrusy fruity, piney, resinous hoppy, notes of pine, spruce, resin, lemon peel, lime peel, a touch of lemon juice, lemon pith, pineapple, whiffs of lemon balm; lingering, citrusy and bitter hoppy finish, well hidden alcohol. Creamy-oily texture, smooth and soft, minimally greasy palate, fine, mildly prickly carbonation. Superbly balanced, simultaneously intense and curbed, full of subtleties, well crafted - excellent!

(473ml can from 4th and 7, Toronto) Pours near-opauqe deep muddy gold with a decent white head and spotty lace. Notes of pink and white grapefruit pulp, ripe pineapple, dank mango, some florals, white bread with lightly honeyed sweetness, big hit of grapefruit pith and pale citrus oils middle to finish of sip, overall balance is moderately sweet but not excessive and indeed pretty dry for a TIPA, bitterness is low but a real mineral, slightly chalky drydown amplifies the grapefruity floral nature of the finish. No apparent alcohol despite the 10+%. Medium-plus body, soft and plush with low carbonation. Nice TIPA again from Willibald, they seem to keep the sweetness in check and the water chemistry gives a crispness that keeps things restrained for the style. Good brewing.

473ml can. Quite hoppy, tropical fruity and juicy with some citrus, pineapple, mango, grapefruit and some bitterness. Soft body, ABV is super well hidden. Pretty nice triple IPA.

On tap at Birreria Volo, pours a clear golden blonde with a medium white head. Aroma brings out some campfire smoke, hay, and biscuity malt. Flavour is full of campfire smoke, straw, and biscuity malt. Nicely smoky, with a gently sweet but mostly dry palate. Very good.

Can sourced from Beergium and drunk at home (05/11/2021) - totally hazed to opaque golden yellow with a white head. Big bold juicy fruity with lots of grapefruit and pineapple, lemon wash, some mango and peachy notes, citrus peel bitterness, substantial full mouthfeel and body, robust solid hoppy finish. Worth the hype, beautiful.

Thick, juicy, hoppy, strong. Canned pineapple juice, grapefruit, ripe mango, then some old school piney dankness takes over in the aftertaste. A bit boozy, somewhat sweet, but overall quite enjoyable. Very nice.

Can at Kultainen Apina, Tampere. Color is very cloudy golden with small white head. Aromas and flavors: Fruits, citrus, grape, hops and malts. Nice!
