Mixed fermentation refers to the use of unconventional yeasts and bacteria in brewing, which allows production of beers with unique character. We are driven by experimentation and are obsessed with the awesome flavours which can be achieved from mixed-culture fermentations.
Inspired by tradition mixed fermentation beer styles we seek to pay hommage to our brewing forbears, using new techniques, fermentation styles and the highest quality ingredients to produce complex, interesting and (most importantly) tasty beer!
The breweries name references the tongue-in-cheek description of the ‘goat’ like qualities of wild yeast (Brettanomyces) characteristics. A reverence to this yeast and to the beers which display these characteristics is a strong part of the identity of the brewery.

Can from Great Grog. Almost clear golden body with a short/lived white head. Low carbonation. No lacing. Aroma of grass and white pepper. Flavour of grass and green banana. Medium body with a slick texture z. Soft fizz. A solid wheat beer.

440mL can, pours jet black with a medium brown bead. Nose is full of deep dark roasted malt, some dusty dry cocoa powder, a touch of coffee, and some wood. Flavour is bold, with massive roasted malt, wood, a touch of coffee and cocoa, finishing dry and very roasty. Almost reminds me of Yeti with its woody roast and dryness.

Dullish pale. Vinous notes and it comes across with a nice peachy character. Balanced, light brett. Some good tartness in the finish. Juicy with a lot of acidity, a touch of sweetness, and again a good gooseberry, stone fruit character.

375mL bottle, pours a hazy golden with a small white head. Nose is full of white grape skins, moderate funk, some white grape tang, and a touch of citrus. Flavour is quite tart and acidic, with white grape skins, moderate acidity, light funk, and some toasted grains. Fairly cohesive, with a nice white grape skin character, along with funk and moderate acidity. Good stuff.

375mL bottle from Sterk. Pours hazy gold with a white head. Lots of grape skins on the nose, gentle tartness, a bit of funk on the nose. Flavour has a lot of tart, punchy grape skins, funky wild yeast; fairly juicy. Tart and punchy, really nice.
