Demi-sec, 4%. Clear golden, no head. Straight and tart applejuice, lots of wood, tannins, lichen, light mold. Hardly any carbonation in this bottle.
4.5%. Healthy loud pop, little gush. Unclear golden, short lived foam head. Moldy tones of cellar cooled apples, wood, applestems, green leaf, clay and almond spice. Light sweet and moderate bitter. Juicy and lively carbonated. Goddamn I like this.

Bottle shared thanks to sjogro. Huge pop! Bit hazy golden. Sweet apple, tons of barnyard funk, dry cellar, a touch pear and sweet mirabelles. Over medium sweet, light bitter and tart. Medium bodied, just medium dry. Lovely, though maybe a touch too sweet.
Bought at the source, the farm of Gautard Sr. Bottle gushed while opening. Unclear apple juice. Sweet and somewhat meally apples. Stem and wood. Quite juicy and sweet for a ‘brut’, but it does have a steep dry edge. Strong sparkly carbonation. Farmhousey.
